Of course! All food has a certain water content. Nothing wrong with your sauce, yes it will split and settle next day. Reheat it, and stir.
Can add a bit of cream too, yum.

large mushrooms for this put a spoonful of pesto and then grated cheese bake 15mins in oven and the under grill for a min they are delish

big field mushies on the bbq or oven,, tops down,, a cube of butter crushed garlic on the bottom

Everything has water in it. And adding butter adds to the liquid too.
Cornflour is fine, it can split, so give it a stir the next day...reheat and voila.
