I microwave butter, lemon juice & lemon zest together & pour it over microwaved or steamed asparagus.

Tonight though, I am making a bacon, mushroom & asparagus quiche.

I made a bacon, asparagus, cheese & basil pesto pie... with a couple of eggs & a dollop of cream, a couple of nights ago ...I winged it with no recipe & it was very tasty.

Microwave
Serve with hollindaise (the stuff in a jar is OK)

I discovered a new one to cook and serve asparagus as a snack. It's delicious. It's an Annabel Langbein recipe.
Keep a packet of puff pastry sheets in the freezer, then whip up these quick & easy, vegetarian hot savoury tarts when friends or family turn up unexpectedly.
Ingredients
1 sheet puff pastry
8 fresh asparagus spears
50 g grated Parmesan
finely grated zest 1 lemon
Salt and ground black pepper, to taste
extra virgin olive oil, to drizzle

Method
Preheat oven to 200°C and line a baking tray with baking paper.
Cut pastry into 8 rectangles (4 rows x 2 rows).
Cut asparagus spears in half and place 2 halves on each pastry rectangle.
Top liberally with parmesan, scatter with lemon zest, salt and pepper and drizzle with a few drops of olive oil.
Bake until puffed and golden (about 10 minutes) and serve immediately.
