This is probably a silly question but do you get a thermometer to gauge the temperature of the food or is it to be lukewarm to touch or something like that.

so long as its not heated/cooked over a certain temperature, which means I believe you can melt chocolate ...cookes may be able to correct me here

so pretty much nothing is cooked

I made the rawatarians granola bars off her site the other day. I put them in the dehydrator and they were delish. Crunchy on the outside and chewy in the middle.

Cooks - have a book on raw food, some of the recipes use coconut meat. Can this be obtained in NZ and if so, do you know who would sell it.

I have made the cheesecake on p.72 several times, and it's really good. I have a high-speed blender, but you can do it with a food processor - just make sure you soak the cashews well first (maximum: 7 hours). Also, as with all raw nut desserts, taste and texture is even better if you make 2-3 days in advance.

When she mentions lecithin powder, is that the same as lecithin granules?

I am guessing they are different, but I used granules, and it worked just fine.

Lots of good recipes - the celery soup and the 'peanut' sauce are two more I can recommend :)

P.S. Anyone who wants to try a raw soup, but doesn't have a high-speed blender/doesn't want to have nuts, you can substitute the nuts with avocado in equal ratio, e.g., 1/4 cup cashews = 1/4 of an avocado.

3) Press base mix into a 20cm (8inch) tart pan
4) When cocoa butter is cool, using a blender, blend all strawberry topping ingredients together
5) Pour strawberry topping onto base, smooth out and chill until set.

Sounds amazing have made a copy to make for xmas! Thanks heaps for sharing.

4 Cs salad.

Mix:
1 cup raw cashews
2 t ground coriander
1 T oil
half a cup shredded coconut.

Spread on baking paper and roast at 150 degrees for 10 mins until just brown. Don't burn!

Grate 4 carrots
Chop a good bunch of coriander
Mix with a dressing made of lemon juice, garlic, oil, salt, some runny honey and cumin.
Toss through nut mixture and top with black sesame seeds.

I make this all the time, first had it at a friend's place; its from her Revive cafe cookbook

Raw Lentil Chilli
1 Cup Lentils soaked in water for 24 hours

Finely dice
1 small red onion
2 carrots
2 cups mushrooms
Add
¼ cup Oil
2 Tablespoons light soy sauce
2 Tablespoons coconut sugar (or brown sugar)
Marinade for at least 1 hour

In blender whizz
¼ Cup sundried tomatoes
2 tablespoons oil
4 dates
2 tablespoons apple cider vinegar
1 tablespoons coconut sugar (or brown sugar)
½ to 1 tablespoon chilli powder

Mix drained lentils, vege mix and sauce together and add salt and pepper to taste. Garnish with chopped tomatoes and sour cream or yoghurt (optional)
Can be served as a side salad or in a wrap.

Leave them immersed for an hour or two until fully marinaded. In your Vitamix/Thermomix or vertical blender add the cashew nuts, coconut cream, garlic, onion, juice from one lemon and the semi-dried tomatoes. Blend thoroughly. Add salt to taste. Add also a dsp. equivalent of the marinade, which will give the sauce a rich ‘reduced’ appearance. Now strain off the mushrooms into a separate prep bowl and pour in the creamy liquid. Fold in the mushrooms. If you have some of the cream left then keep that aside and use as a mayo base for salads etc. Set aside for 15 minute to let the creamy flavours infuse through the mushrooms. Drop the florettes into your food processor and pulse to a rice consistency. Add the lime juice, dash of oil and S&P to taste. Spoon off the rice into a nice serving dish and ladle off the stroganoff mixture and top off with parsley, finishing with a drizzle of oil and a grind of pepper.

I use gluten free soy sauce as I have yet to find the shoyu sauce here in Masterton.
