If you can tolerate seeds then these are yum!! Recipe from my daughter in UK.
NUTTY CRACKERS
200g sunflower seeds
60g flax seeds
100g sesame seeds
2 tbs psyllium husks (from Bin Inn)
1tsp salt
500ml water
Combine all in a bowl and leave to stand until thick - about 10/15 mins.
Spread mixture out as thinly as possible on baking sheets (I line my baking sheets with non-stick foil - can use silicon mats but dont use baking paper because its a wet mix)
Bake at 160C for about 1 hour - may need to rotate trays to get even colour, then leave for further 15 -20 minutes till really crisp.
when cool just snap in to appropriate size pieces.
NB. I use 2 rounded TBS of psyllium husks and my oven cooks them nicely on fan bake 150C top and bottom shelf! I have added pumpkin seeds/chia seeds if I have them on hand. Nice with dips/pates

This is my favourite recipe and I tend to halve it. Buy beautiful fresh and flavourful EVOO at your local Farmers Market or try a flavoured olive oil such as herby one.
Ingredients
1 cup rolled oats
1 cup sesame seeds
1 cup linseed (flaxseed)
1 cup sunflower seeds
1 cup pumpkin seeds
2 cups flour (Healtheries Gluten Free Baking Mix is a good option)
200m water
150m New Zealand Extra Virgin Olive Oil or a Flavoured Olive Oil
3 tsp baking powder
3 tsp salt

Preparation
Mix all ingredients together adjusting the oil and water to make a workable dough.
Divide the dough into three. Roll each piece of dough out on a baking tray lined with baking paper (using glad wrap on top so it doesn't stick to the rolling pin). You should have enough to fill three baking trays. lf you like your crackers quite salty, grind coarse rock salt on top just prior to baking. Use a pizza cutter or large knife to cut into squares before baking.

Bake at about 200 degrees for about 20 minutes on fan bake, all depending on your oven. You may need to switch the trays around at intervals depending on how efficient your fan bake oven is. Watch them closely! Take out when lightly browned.
Experiment with how thin or thick you roll the dough out so that you get them just how you like your crackers. Obviously the thickness will determine the cooking time.
