How to make mixed veges more exciting?

I watched the version of kids cooking on TV tonight and they cooked a pie... which was 3/4 cream.... looked absolutely awful... a pastry base and the ingredients had obviously been measured out for them... then a filling of some sort of citrus... judging from the colour of it some of it was very articifical then loads of cream on the top... one little girl of 8 proudly proclaimed she had been cooking since 2 years old....

We eat them sometimes, they are a good standby for the busy cook, who cares if those 'others' think you're a baddy ha ha. Try them already cooked in an omelette, add a few to curried sausages/ Poke some into your mince or a rice dish. Make sausage patties, add a few leftover veg. Use your imagination, make a potato bake with them in
Edited to say, we have a fab vegetable garden, but still gob down the frozen sometimes....Casseroles love them!

My tip: Never "boil" veges, always either steam, stir-fry or simmer them in very little stock.

Frozen peas are excellent...just throw them straight into a pot and heat through with constant stirring till just done ( NO butter, oil or water). And I also stir in a couple of cubes of frozen chopped spinach into curries just before I serve them.

That's pretty much how I do frozen peas (the only frozen veges I buy & hell, they are handy at times, huh) ...but I do add a small knob of butter. I learned that trick from the Digby Law's vegetable cookbook. let's face it, they are delicious raw, they are small so they don't need a lot of cooking.
I don't buy frozen spinach, but try to have a year round supply & I add it to all sorts of dishes, at the end.

They say that Frozen/ mixed veges are very nutritious, having been frozen, just picked. As opposed to some produce that might sit around deteriorating rapidly and losing some of its nutritional value. Peas and corn are the only ones I can stand the taste of though...

Agreed - especially the made carrots, corn, peas combo. They have their uses - great to chuck into a pie without all the chopping, dicing, etc. I don't add water whenever I cook frozen veg anymore - peas, spinach or peas and corn are much nicer if you cook them in the microwave with a generous knob of butter instead - they don't really need any extra water. I use frozen minted peas to make a delicious salad. The stir fry veg mix can be ok but better if you defrost them before adding to your hot wok dish

Are the usual 'mixed veges' with carrot, corn, beans and peas cheaper than other mixed veges? I either buy whole beans or mccains garden greens. I think they're a lot nicer. I'm talking about frozen veg, btw.

There are a whole of new mixes out now with Countdown (as announced on the Food show). They are shrink wrapped and cooled, rather than frozen. From soup mixes to stir fries to all sorts.

Yuck cant stand mixed veges, if you need to have frozen veges, I always buy the stir fried ones, bit dearer but more tastier.

Nothing wrong with buying frozen mixed veg for us as
a) they are in fact much fresher than what passes for so called fresh veg in the supermarket
b) cooking for just two of us, you get a decent variety in a proper portion size.
c) you can at least choose to ignore a mix that has veg you don't care for - for us, that is peas and green beans and broad beans!

Totally agree that just plain boiled, they are totally unappetising. OK chucked into a stir fry and drowned in some sort of sauce.

I don’t have a proper recipe so I just kind of wing it ...

Char a red capsicum so you can peel off the skin then discard the seeds and slice the flesh. Slice a red onion top to bottom finely and cook in a little oil until just softened not browned. Cook minted peas and while still hot combine with feta cheese, capsicum and red onion - season with salt and black pepper - you can add a little fresh chilli finely sliced as well if you like it spicy (I do) or fresh parsley

I do not like frozen veg, my mum is addicted to them and has so much in her freezer it is hugely funny to us. Mum douses hers in cheese or white sauce. I always thought that mum had gone through the war and starved, her pantry would feed an army, but no the grandfather fished regularly, had a huge garden, chooks for both eating and eggs, as well as he went shooting animals. Or so I was told.

The only Frozen vege I will eat is baby peas. Can't abide Frozen vege packs...however they're cooked. Seasonal fresh or not at all...I like to enjoy what I eat...bar fresh Brussel sprouts which I only eat because I feel I have to once or twice a season.
The young grandkids although, love frozen veges, anytime of the day.

Frozen mixed veges cooked in the microwave with couple of tblsp. water (depending on quantity cooked) microwave until just tender, drain them and then stir fry for a couple of minutes adding soy sauce or sweet chilly sauce.

Mixed veges steamed in MW, then add chopped onion or spring onions, diced red capsicum, diced cooked potato and dress in a minted mayonnaise dressing. Sometimes I also add some canned/home cooked chickpeas too.

I nuke mine in the microwave with no added water just to heat them through then toss them in the frypan with a glug of oil or butter to 'pan fry' them. It takes that wetness out of them and fryaing always adds flavour. Works very well with frozen green beans and crushed garlic in the pan.

I have bags of frozen peas, green or butter beans and spinach in my freezer at all times but can't stomach pre mixed frozen veg. Love the ones l buy but could only imagine using the mixed ones in a soup.

cook then dump them in the same sauce you use for mac n cheese. sprinkle with breadcrumbs and grated cheese then grill.
