Mini cheesecakes are always a hit, raspberry white chocolate.

Why? 5 people, 5 desserts - obviously not finished all at the one meal but it saves arguments about whether we should have pavlova or tiramisu, cheesecake or trifle ...

Someone mentioned mini cheesecakes. What would you make these in? Mini muffin pans? If so how do you get them out cleanly? I was thinking of making that lovely lime pie which is very cheesecake like, mini ones would be a hit i think.

It is a whole meal of desserts but this year it will be our actual Christmas Day dinner. Daughter is going to the uk for Christmas so we are having Christmas a week early and then for Christmas Day with my boys it will be an antipasto platter followed by 3 different desserts (one each) - any leftovers will be served at our Boxing Day BBQ with friends.

Individual strawberry shortcakes

We will be having our usual Christmas dessert meal at some point but no-one is letting on yet what they are making/bringing/buying so there may be some surprises

I love to do the ..CHOCOLATE-CHIP-COOKIE-ROLL:
....This is my version of it.
Two packets Choc-chip cookies
Small flat dish sherry or fruit-juice
Whipped cream (FIRMLY whipped....)
Extras for decoration: Two chocolate FLAKE BARS.
Dip one side of one biscuit into sherry BRIEFLY, and spread with whipped cream. Repeat until you have done 4-5 bickies, then prop them end to end on a large circular platter (a good sized, flat dinner plate works fine.)
Continue dipping and spreading, gradually moving the roll into a circle by the time you've done the two packets of biscuits. Cover the lot with firmly whipped cream, AND FREEZE.
This can be done several days before Christmas. I place mine in a large plastic bin to protect it, and keep it contamination free whilst jostling for space with turkey, lamb, etc. for freezer space. Remove from freezer just before serving. Sprinkle over two crumbled FLAKE bars, and decorate with halved glace` cherries and candied Angelica (Specialty deli-type stores). It's very different from the usual soggy stuff of yester-year, almost like a slightly boozy ice-cream with chocolate chips. It's delicious. Individual portions can be made for MINI-DESSERTS by using small miniature baking pans with removable bottoms. Very elegant on an individual plate with the cherries and Angelica glace` around one side edge. ENJOY!! And ideal for our Southern-Hemisphere, summer Christmas dinner!!

If making bases for mini desserts, buy the mini paper cups and place them inside the mini muffins tins then press your mixture in, when you want to get them out it makes it a lot easier to lift them out and Pop them out if you want to, or just fill them in the cups.

We do a selection of mini desserts for Xmas each year.
This year we are going for a little more of a grazing platter style.

Macarons, Fruits, Mini lemon meringue pies, Brownie, hand made marshmallow, Meringue kisses, nuts, fancy chocolates and anything else we come up with before then :-)
