I just saw a link to annabel langbeins recipe I think from the herald. Me, I wouldn't bother altering the Edmonds recipe I use as it's always been a winner. It is from the updated Edmonds Illustrated Cookbook of 1998. Most recipes in this are keepers.

Mine turn to a big fail, the mixture was far to dry though I followed the recipe to the letter, would not roll into balls, turn out to be big crumbly mess. Grr

This is my 'go to' ANZAC biscuit recipe

1 cup plain flour
1 cup rolled oats
1 cup sugar
3/4 cup coconut
1 cup dark chocolate bits
150g butter or margarine
2 tbs golden syrup
2 tbs boiling water
1 1/2 tsp baking soda
melt butter and golden syrup,
combine water and soda, mix into butter and cool
combine oats, flour, sugar, and chocolate bits then add butter mix, stir well
put teaspoonfuls of mixture onto trays, allow for spreading
bake in slow oven, 150* for 15-20 minutes
cool on tray for a few minutes, loosen while warm and put on wire rack to cool.
super easy and tastes great.

found an old recipe book they had nz biscuits same ingreds but a bit moist so melted together while baking how ever tasted good

One thing I miss on a low carb diet is biscuits, especially crispy ones. Here's my own Low Carb ANZAC biscuit recipe. Just 5% carbs. Made another batch yesterday.
Cook time:30 mins Makes:about 20-30

1 cup rolled oats
½ cup Gluten flour
¼ cup Coconut flour
¼ cup LSA
1 cup coconut
1 cup erythritol
¼ cup Black strap molasses
1 tsp ground ginger
125g butter
2 tbsp boiling water
½ tsp baking soda

Preheat oven to 160°C fanbake and line 1-2 oven trays with baking paper for easy clean-up.
Combine rolled oats, flour, coconut and sugar in a large bowl.
Heat together butter, golden syrup and water until butter melts. Stir in baking soda, then mix into dry ingredients until well combined.

Roll mixture into balls slightly smaller than a golf ball and place on trays, allowing room for spreading. For crunchy biscuits with a chewy centre, lightly flatten with a fork and bake for 20-25 minutes. For chunky, super-hard biscuits, bake for 25-30 minutes. For very crunchy thin biscuits, press very flat and bake for 15 minutes. Allow to cool on the trays (they will harden on cooling). They will keep for several weeks in an airtight container.

Do you mean gluten-free flour? Or powdered gluten?
