hi crew.... well its only 81 sleeps to go.... fruit mince all made, lists all finished, last layby paid off today.... wraping all done ready for the tree.... hubby working on the lights and planning his display... happy baking....

Did some Christmas shopping today! I've still got some homemade fruit mince in the fridge from last year. Its in a sealed jar - do you think it will be OK? Has brandy in it.

yeah it would say that it will be the best ever gardie!! try a wee bit and see how it tastes... i still have 2 christmas puds in the frezzer from last year and I so know that they is gonna be awesome!!!! got our presents all done and getting aussi and uk posting away next week... blessings all with ya christmas prep...

Thanks - was going to make some of those Alison Holst mincemeat muffins but it seems a waste when you can make those lovely buttery shortcrust christmas mince pies. My mind is made up - thanks ladies!
Going to make my list of fruit so I've got it all ready for labour weekend - that when I traditionally make my cake and fruit mince.

allison holsts fruit mince recipe..
in a foodprocessor put:
1/2 lemon rind and juice, rind of 1/2 orange, 1/2 cup brown sugar, 2 small apples (chopped and cored but leave skin on), 1 cup sultanas, 1 cup mixed fruit (cake fruit mix), 1/2 tsp eac of mixed spice, cinnamon and salt, 1/4 tsp ground cloves, 1/4 cup ginger ale or whatever takes ya fancy from the 'cabnet'. mix all together till you get the consistancy that you want - smooth, chunky etc. then store in covered glass jars in the fridge - will keep for up to 6 months aok.. enjoy its just lovely but not too rich...

Made the Christmas cake this weekend and got the whole family to have a stir of it (family tradition). Popped in dried blueberries, chopped apricots, sultanas, green and red cherries, orange flavoured cranberries. I used 42below feijoa vodka and peach schnappes(sp) for the flavouring and soaked the fruit for 2 days beforehand. Sprinkled some more of the vodka over the top when it came out of the oven. Can't wait for christmas day now - it has smelt so yum all day whilst cooking.
I think I'll get some more dried blueberries and the cranberries for the fruit mince too. Those blueberries have the most intense flavour.

I knew you would know. 52 today - that's getting awfully close. Better get on with things. Will dig out my Christmas mince recipe tonight and post it here - I've made it for years and its the nicest I've ever tasted. Off to work shortly so its a tonight job.

Christmas Fruit Mince.

I got this recipe many, many years ago from the Australian Women's Weekly. I adjust the fruit depending on how I feel, I also pour some type of spirits over the almost fill jars. This years I'm going to include dried blueberries.

1 cup Dried chopped apricots
1 cup sultanas
1 cup currants
1 cup raisins
225g tin crushed pineapple
1/2 c brown sugar
1 c grated apples
2 tsp cinnamon
1 tso allspice
1/2 tsp cloves
2 tsp grated lemon rindd
1 c suet (Shreddo) (store this in freezer for longevity)

Put all ingredients into food processor and pulse to combine. Pack into jars, cover and store in the fridge.

I use Jo Seagar's sweet short pastry recipe
125g butter
1 cup flour
1/2 c icing sugar

Process until mixed. Press into tins and refrigerate 30 mins before cooking. Pop in fruit mince. Lay out remainder between 2 sheets gladwrap and roll till desired thickness and using small star shape, cut out tops for the pies.

lol ellie its more about our budget than anything else... we do layby's christmas club etc as it spreads it out over the year and makes it so less stressful at the other end... also the last 3 months get even busyer for us so its nice to know that our christmas is sussed and we will get to enjoy it awake rather thank alseep lol.....
and i have to confess that we are addicted to christmas so love it all year round - half the fun for us is in the planning..

FROZEN HAM
Just cooked a ham that was sitting the the freezer frozen since last Xmas. Used Stout to moisten it for about 2 hours and then used stout, brown sugar, ginger and pineapple to baste for the last 1/2 hour as glaze. Fantastic and moist.

Some of you might be interested in this... not strictly christmas cooking, but I'm going to make some and fill them for gifts this year.

I made a trial run of gingerbread gift boxes. I figure filled with truffles, chocolates or cookies they would be great to give out!

Also saw the other day a show where a guy made plate sized thin meringues (x2), then layered them filled with cream and berries, topped with more cream and berries. Would a normal meringue recipe work?
