Here you go :-)
Ginger Crunch (GF)

Ingredients:
250g butter
250 g sugar
400 g gluten free flour
2 tbsp ground ginger
2 tsp gluten free baking powder
4 tbsp preserved ginger - finely chopped
For the icing:
100gms Butter
180gms icing sugar (GF)
4 tbsp golden syrup
4 tsp ground ginger
Directions:
Pre set oven to 180 degrees Celsius.
Cream butter and sugar, then add sifted dry ingredients, beat well until mixed, add chopped ginger ,then use hands to knead it into a ball.
Press into greased shallow tin (31cms x 20cms)
Bake 20 mins. Allow to cool & settle then:
For icing:
Into a pot add butter, icing sugar golden syrup and ground ginger.
Heat until melted then pour over hot slice.Place in fridge.
Cut into squares before it gets too cold.

Has anyone tried Laucke gluten free bread made from a mix. You can get it from Bin Inn, is $9.95 a pkt which makes 2 loaves and is by far the best gluten free bread around. Easy to make and keeps fresh for days.

Hi Boots,is is LSA,linseed,sesame and almond.
It is a mixture you buy at the supermarket,or you can grind them yourself.

LSA is linseed(flaxseed) sunflower seeds and almonds ground to a meal.
It is available at most supermarkets in the specialist or flour section.
I buy it at Bin Inn.

I am not experienced enough with GF baking to recommend a substitute, but with only 3 tbsps required you could try any combination of seeds and nuts.
It's a matter of working out how absorpant the meal is, so that you get the quantity of fluids correct.

I have made this loaf and found it to be very dense. I slice it like bread and I don't think I could have eaten the whole thing like a burger bun.

Bumping this up & also to say I went to a wonderful GF Cooking Class in Pukekohe Auckland on Sat. They do classes Tauranga to Whangarei.
5 hrs of wonderful cooking, eating, sharing hints & you get to eat the yummy breads,scones, pasta etc that they make. Highly recommend the classes.

Hi.
I might have an easy bread recipe to post.
I have been fiddling with the 'no knead' bread in Recipes.
Is ok, but needs a little tweaking.
Cheap and easy.

So pleased with this recipe- it's a fast and tasty little marvel!
I used one and a half times the amount of dry ingredients, as initially it was too "eggy" for me. Also added 1 tsp caraway seeds and a little mixed spice to make a sweet bun. Cooked it in two smaller batches.
Will try a savoury version sometime. Fantastic little recipe.

Sandwich Bread Recipe 2 tsp yeast
1 tsp sugar
1/2 cup water
Add the yeast and sugar to 1/2 cup warm water and leave 5-15 minutes in a warm place until frothy.
In a bowl put the following
3 cups bakels 100% GF Bread Mix
1 tsp guar gum
1 Tbsp milk powder
1 cup water
1 tsp white vinegar
1 tbsp oil
Add yeast mixture and mix well.
Put in breadmaker and bake on basic loaf for 3 hours

Gluten free Breadmaker Bread Make up the bread mix first: 4 cups white rice flour, 1½ cups potato flour, 2/3rd cup tapioca flour(Recipe says it makes 4 loaves but it makes a very small loaf so I one and a half times the recipe that follows and cook for the same time). One loaf: 2 cups gluten free mix, 2 tbsp sugar, 2 tsp xanthan gum, 1 tsp salt, 1 ½ tsp active dry yeast, 1 cup lukewarm milk or milk alternative, 2 tbsp oil, 2 eggs, or 4 tsp egg replacer and ¼ cup water and 1 tbsp linseeds, 1 tsp cider vinegar. Sift dry ingredients, add yeast Blend milk oil eggs or egg replacer and vinegar. Add to dry ingredients, mix to combine. Press into bread pan. Close lid, bake following breadmaker instructions for a white loaf(about 3 hours) Cut when cold and freeze in slices unless going to eat. Do not double recipe as it overflows pan only use one and a half times the mix for a 1kg loaf. :) Here is another from Melford.

Has anyone tried the new 'Macro' GF range available at Countdown.?
I have just used the plain flour with favourable results.

Made a lovely chai scented cake, cheese pastry wrapped olives, and a pastry for the top of a meat pie.

No added sugar in the flour, EA.

If you are meaning the cake - I adapted this recipe.
Just exchanged the spelt for Macro plain flour, and carob for cocoa.

I don't know what you're dietary requirements are apart from Gluten and sugar free.
I used no sugar in the cake, but my apple sauce was homemade and did have a bit of sugar in it.

Great recipes - please keep this going - I have 3 Gluten Intolerent people in my house and 2 are diary intolerent as well and we all need everyone elses recipes so we can have some variation in our diets - I struggle with ideas for my 3 year olds lunchbox for kindy - any ideas greatly appreciated - GF & DF

I just had a successful fiddle with the following recipe...
Might be useful for lunch boxes or treats.

These tastes like Afghans-not so much butter in them. Makes 24

125 gr butter
2 tablespoons Golden Syrup
1 cup Cornflakes - GF
1/2 cup rolled oats - I used quinoa flakes
1 cup plain flour - Macro GF plain flour
1 tsp Baking Power
1/4 cup Cocoa
3/4 cup sugar
1 tsp Vanilla essence

Melt butter, GS in a large pot or large bowl in microwave, add rest of ingredients.
mix well, Press lightly into a baking paper base lined swiss roll tin.
Bake at 180 degrees for about 20 mins.

Ice when hot, then cool slightly before cutting.

Fish Pie
4 fillets gurnard
500 mls milk
25 gr butter or olivani
2 tbsp maize cornflour
1 leek
3/4/ bunch parsely
1 Tin John West Red Salmon (must be red)

Cut up gurnard into bite size pieces and simmer in milk with 1/2 the butter and two finely chopped onions and 1 bunch of parsely. Add 2 tsp GF Herb Stockpowder (from Bin Inn) and plenty of ground black pepper. Slice the leek and cook in boiling water. Add to milk mixture then add drained tin of salmon. Thicken with 2 tbsp cornflour. Pour into an oblong casserole dish and top with fresh gluten free breadcrumbs which have been prepared in your food processor and to which you have added the other half of the butter/olivani. Bake 180 C until the top is golden brown.

Ideal family baking.

I have made the short sweet pastry so far - it got the thumbs up from the gluten eating members of this family.

I am going to make the custard buns and spicy fruit loaf over the weekend.

I made two recipes from the healthyfood website, the banana bread and choc cake with boysenberry topping. Was thrilled with the results as were the boys who are not GF. So nice and moist and tasty!!! Will be trying more next baking day.
