Orange Biscuits INGREDIENTS


125g butter
2 teaspoons grated orange rind
3/4 cup (165g) caster sugar
1 egg
1 cup plain flour
1/2 cup self-raising flour
2 tablespoons orange juice
3/4 cup desiccated coconut
ORANGE ICING
1 cup icing sugar
1 tablespoon orange juice
2 teaspoons finely grated orange rind
METHOD
Preheat the oven to moderate 180°
Beat butter, rind & sugar in small bowl with electric mixer until creamy. Add egg, beat until combined. Stir in sifted flours, orange juice and coconut; mix well. Drop level tablespoons of mixture onto greased baking trays. Bake in a moderate oven for about 12 to 15 minutes or until golden brown.
Orange Icing: sift icing sugar into a heatproof bowl. Add juice and rind, stirring until smooth. Place bowl over a small pan of simmering water; stir until icing is spreadable.Spread biscuits with Orange Icing. If icing thickens, place over simmering water until spreadable. Stand biscuits on wire racks until icing is set.

Mini Carrot Cakes 2 eggs, 1/3 cup oil, 1 c sugar, 1cup flour, 1 tsp b.pwder, 1 tsp bak soda,, 1 tsp cinnamon, 2 cups grated carrot, 1/2 cup raisins.

Beat oil & eggs together in a bowl. In another bowl mix the flour, sugar, b.s. and b. powder together. Stir in the carrot and raisins then add the oil and egg mixture. Stir them all together until they are well mixed. fill muffin tins with the mixture cook 15 minutes at 160 degrees Celsius.

Mini Cappuccino Cakes (12 muffin size) 2 c flour, 1/2 c sugar, 2-1/2 tsp bak powder, 2 tsp instant espresso coffee powder (or instant coffee), 1/2 tsp salt,
1/2 tsp cinnamon, 1 cup milk -- scalded/heated and cooled, 1/2 c butter/marg -- melted & cooled,
1 egg beaten, 1 tsp vanilla ess,
3/4 c choc chips.
**Combine dry ingredients. Stir moist ingredients until blended, fold into dry just to combine. Stir in chocolate chips. Spoon into muffin cups, filling cups about 2/3 full. Bake 15 - 20 mins.
Ice with coffee icing!

Chocolate Caramel Slice 60gms butter, melted
2x200gm packets Tim Tam biscuits
1x500g packet Jersey Caramels
1/4-cup cream
200gms dark chocolate, melted
Extra 30gms butter, melted.
1. Place the biscuits in a food processor, process until finely crushed. Add butter; process until combined.
2. Press mixture over base of a greased and lined 20cmx30cm lamington pan. Refrigerate 30 minutes.
3. Combine caramels and cream in a saucepan, stir over low heat until caramels are melted and mixture is smooth. Spread caramel over biscuits base; refrigerate until set.
4. Combine chocolate and extra butter in a bowl; spread over caramel. Refrigerate until set. Cut into rectangles.

Chocolate & Orange Pumpkin Cake 2 eggs, 125g butter,1/2 c caster sugar,1 c mashed pumpkin, 1 &1/2 c flour,1 &1/2 tsp b.powder,1 grated orange rind,juice of 1 orange, 2 tsp custard powder,
1 TBS golden syrup,1 tsp bakng soda, 3 TBS cocoa.
** Cream butter& sugar, add pumpkin, then beat in eggs, golden syrup& orange rind.
Sift dry ingredients,& add alternatively with orange juice, then put in 8 inch round cake pan.
Bake @ 150c - 45-60 minutes until cake begins to leave side of baking pan. Nice with cream cheese icing & chocolate chips.

American Brownies, the best ever recipe Preheat oven to 175C. Cream together unitl fluffy, 200g butter and 2c sugar. Stir in 2t (real) vanilla essence & 4 eggs. Add 1c cocoa powder, 1-1/4c flour, & 1/4t salt - stir only enough to moisten everything, don't work on getting lumps out. Stir in 1c coarsely chopped nuts (walnuts or pecans are best). Pour into a greased 9x13in or 8x8in (20cm) square pan. Bake 25-30 min for 9x13 pan or 35-40 min for 8x8 pan. Try to wait until they're cool before cutting them out of the pan & devouring. From Classic Kosher Cooking by Sam Finkel. Even more decadent with 200g choc chips stirred in.

Chocolate Chunk Oatmeal Cookies Cream well: 1/2c (100g) butter, softened, 1c firmly packed brown sugar. Beat in: 1 egg, grated rind of 1 orange, 1t vanilla, 1/2c flour, 1-1/2c rolled oats, 1/4t salt. Fold in: 7oz (200g) chocolate chips or chopped dark chocolate. Lightly grease and flour baking sheets, preheat oven to 375F (190C). Drop dough by teaspoonfuls onto sheets, bake for 12 mins, makes about 4 dozen small cookies.

Chocolate Rock - tried and tested 50g butter, 2T golden syrup, 250g dark chocolate. Melt together in a saucepan. Remove from heat and add 200g shortbread, broken into rough chunks. Press into a 20 x 20cm pan that has been lined with baking paper. Refrigerate until almost firm. Slice into bars and then refrigerate until hard. Dust with sifted icing sugar prior to serving. This is very tasty!

Loulou cake-(slice) This is my absolute favourite slice - a bit like a cakey belgium slice.Yum
1 Pkt flaky pastry, 125g butter, 125g sugar,2 eggs, 125g flour, 2 t mixed spice, 1 t baking powder, raspberry jam.
Cream butter and sugar, beat in eggs, add dry ingredients. Line a swiss roll tin with flaky pastry and spread with raspberry jam. Cover with cake mixture and bake at 180 C for approx 30 mins. Ice with raspberry icing and cut into squares.

Help!!!Needed to cook for school tomorrow!! I have seen a recipe somewhere for a slice that has crushed buscuits on the bottom, then chocolate chips, dried fruit and slivered almonds then pour over a can of condensed milk and bake. Does this ring any bells with anyone?? Is that all there is to it - then into a 180 deg ? oven for? Am guessing - really want to trow it together for school morning tea tomorrow am - can someone please lead the way....

Eureka! I found it! Thought I'd share... Outrageous Cookie Bars -Excuse Americanisms - easy and FAB!
Ingredients:

1/2 cup (1 stick) butter or margarine
1 1/2 cups graham cracker crumbs
1 can (14 ounces) CARNATION Sweetened Condensed Milk
2 cups (12-ounce package) NESTLÉ TOLL HOUSE Semi-Sweet Chocolate Morsels
1 cup flaked coconut
1 cup chopped walnuts


Directions:
PREHEAT oven to 350° F.

MELT butter in 13 x 9-inch baking pan in oven; remove from oven. Sprinkle graham cracker crumbs over butter. Stir well; press onto bottom of pan. Pour sweetened condensed milk evenly over crumbs. Sprinkle with morsels, coconut and nuts; press down firmly.

BAKE for 25 to 30 minutes or until light golden brown. Cool completely in pan on wire rack. Cut into bars.

well done, the only one I could think of (and not as glam) is to mix enough melted butter to moisten (wet) 1 pkt of crushed biscuits.
Press into sponge roll tin - bake 10 mins mod oven.
Mix 1 can condensed milk, add enough coconut to make a thick mix.
Pour over biscuit base and bake for 10-15 mins until golden brown.
Ice when cold with choc icing.

Have made this for ever, dont know what its called.

elleneva The recipe you are after is the MAGIC SLICE - 1 1/2c sweet biscuit crumbs, 1c dark chocolate bits, 1c coconut, 1 can sweetened condensed milk, 75g melted butter, 1c raisins or dried apricots, 1c sliced almonds. Pre-heat oven to 180°C. Put crumbs and butter in a bowl and mix thoroughly. Press evenly over the base of a sponge roll tin (line with baking paper if not non-stick) sprinkle choc bits over the base, cover with raisins or apricots, then coconut and almonds. Pour the condensed milk over the top. Bake for 25-30 min, or until the top is golden brown and the centre firm. Stand tin on a rack until cold then cut into squares or bars.

Tamarillo Muffins - Makes 10 standard size These are yummy & soft.
1/2 cup sugar, 2 c flour, 2½ tsp baking powder, 1 tsp grd ginger, 1/2 tsp cinnamon, 1/2 tsp nutmeg,
1 egg, lightly beaten, ½ c milk,
100g butter (melted),
3 peeled/chopped tamarillos eg 1x1 cm cubed), 1 extra tamarillo, peeled and thinly sliced.
Preheat the oven to 200°C. Lightly grease muffin pans.
Place the sugar and sifted flour, baking powder and spices in a bowl. Combine the egg, milk and melted butter. Add the liquid ingredients and chopped tamarillos to the dry ingredients and combine quickly, until just moistened. Spoon mix into muffin pans until almost full. Top with a thin slice of the extra tamarillo. Bake for 20-25 minutes. Recommendation: reheat gently in microwave and serve with warm custard & a dollap of ice-cream for pudding!

Coconut + Apricot Loaf This is great if you haven't any eggs or butter. Highly recommended everyone loves it.

1.5 cups flour, 1 + 1/4 cups coconut, 1.5 tsps baking powder, 2/3rds cup raw sugar,1/2 cup dried chopped apricots, 1 cup milk.
Mix dry ingredients together with the milk. Add chooped apricots. Place in loaf tin and bake for 55 mins in a moderate oven, or in thermowave oven at 160oc for 1 hour. Yummy! Enjoy!

Banana bread (or muffins) Yucky overripe bananas on the discount rack work best! Makes 1 9in loaf, or 12 regular muffins, or 6 extra-large muffins, but I usually double it. In a small bowl, cream together 2T (30g) butter and 3/4c sugar. Mash in 3 chopped bananas (7 if doubled), add 1 egg & 1/3c (75ml)yogurt. In a larger bowl, mix together 2c flour, 1-1/2t baking powder, 1/2t baking soda, 1/2t salt, 1c chopped pecans. Add the wet mixture to the dry, mixing just enough to moisten, leave the lumps. Spoon into the chosen greased tin(s), let sit for 5 minutes in the pan before you bake it in a preheated 175C oven. A loaf will take 1 hour, 6 XL muffins 40-45 min, 12 reg muffins 30-35 minutes. Let sit in the pan 10 minutes before removing & cooling on a rack.

Afghans from Alison Holst's Dollars & Sense cookbook. It was the first time I had ever made Afghans so I was a bit nervous of the outcome. They were wonderful and the extended family ate the lot in a flash, then demanded more ... I made more and they ate them all too :-( I guess they are a hot favourite now. The recipe says that it makes between 30 and 35 biscuits, but they would have been very little biscuits. I made a double recipe both times and it made around 20 giant sized cookies :-D After consultation with the greedy family, only my Mum said they were too big!

Afghans Thought maybe I should post the recipe :-D 200gr butter, 1/2 cup sugar, 1 1/2 cups flour, 1/4 cup cocoa, 2 cups uncrushed cornflakes. Soften but do not melt the butter, then cream with the sugar until light and fluffy. Sift the flour and cocoa into the butter/sugar and mix gently. Add the cornflakes and mix gently by hand. Make into balls and flatten a little, place on cooking paper or a greased tray. Bake at 160oC for 20 minutes. They don't rise or spread much at all. Ice with thick chocolate butter icing while still slightly warm (but not hot). Put half a walnut on top of each biscuit. Allow to cool and eat :-D

I had a muffin frenzy!!!! Went mad making muffins for the freezer. Made Chocolate chip with squares of black forest choc in the middle, raspberry which I lightly spooned through 1/2 cup or raspberry jam to the mix, buttercotch with a spoon of nutella in the middle and vanilla with a spoonful of passionfruit topping in the middle!!! I was exhausted but family very happy and have been requested to make more!!!!

Cherry choccy muffins 2 c choc chips, 1/4 c firmly packed brown sugar, 1/4 c white sugar, 2 tsp bak pwder,1/2 tsp bak soda, 1/2 c chopped glaze cherries, 1/2 tsp salt, 3/4 c milk, 1/3 c vege oil, 2 c flour,
1 egg. INSTRUCTION: Combine flour, 1 & 3/4 c chips, sugars, bak pwdr, bak soda & salt. Stir in cherries. In small bowl combine milk, oil & egg until well blended. All liquid ingredients to dry ingredients; stir just until moistened. Spoon batter into 12 paper-lined muffin cups; cups will be full. Sprinkle with remanning 1/4 cup chocolate chips. Bake 180 oven for 18-20 minutes or until golden. Cool for 5 minutes. These are best eaten within a couple of days (won't be hard coz they're very moorish.

Fruit Salad Cake 2 1/4 cups flour, 2 tsp baking soda, 1 tsp salt, 1 tsp cinnamon, 1/4 c margarine, softened, 1 c brown sugar, 2 eggs, 1 425g can fruit salad, including syrup, 3/4 c chocolate chips, 3/4 cup chopped walnuts.
Preheat oven to 175 degrees C. Grease/flour 9x13 inch pan. Sift together flour, baking soda, cinnamon and salt. Set aside. In large bowl, cream margarine and brown sugar until light and fluffy. Beat in eggs one at a time. Beat in flour mixture, then stir in fruit salad and syrup, mixing just until combined. Stir in the walnuts and chocolate chips. Pour into tin. Bake for 35 minutes, or until toothpick/knife inserted into the center of the cake comes out clean. Allow to cool.

Flapjacks Made these on the weekend and so happy as they turned out just like mum used to make!....125g rolled oats....level tablespoon golden syrup.....60g butter or marg....1 1/2 tablespoon castor sugar....pinch of salt. Melt sugar, butter and syrup in pan. Stir in oats and salt. Press into a 6in greased sandwhich tin. Bake at 190 for approx 20mins or until golden brown. Leave in tin to cool and then cut into pieces. SOOOOO good!

WOW this is a very cool place to come when you a starter baker, I have four boys and decided to start saving money on lunches and bake instead, I must admit my head swelled with pride as I packed their lunch boxes with sultana and bran muffins rather than chips and muslie bars, i am sticking with muffins at this stage as I tried chocy brownie but it didnt quite turn out and the muffins seem to even when you forget to mix the eggs with the milk etc and throw it in at the last stage,

i am loving this thread I am a nanny, working full time in the hols can get boring when the boys want to play outside without me all the time. So I have been in a baking frenzy! Made flapjacks, (its a slice, thing), choc cakes galore, marshmallow choc slice, banana cake, honey rice bubble cake (thanks sirlancelotnz!), choc rice bubble cake, lolly cake, homemade musli bars, proper caramel sauce...Im so proud of myself!

these are to die for - Brazilian Caramel Fudge Balls.
4 Tbsp cocoa, 75ml milk, 1 Tbsp butter, 2 cans sweetened condensed milk, 1 cup choc hail or choc chips plus extra choc hail to garnish. Combine cocoa and milk in large heat & microwaveable jug or bowl. Add butter, condensed milk, and the choc hail/chips. Stir to combine and microwave uncovered on HIGH for 12 minutes, stirring every 3 mins. When cooked, the mixture should begin to solidify and hold together. Leave to cool. Then roll into very small balls and roll in choc hail. Chill before serving. (the reason to make them very small as they are quite sweet, but oh so good!)

Chilled Lemon Creams I haven't made them, but planning on it. Nice and easy and very attractive dessert.
600ml cream, 2/3 cup sugar, 100 ml strained lemon juice.
Bring cream and sugar to boil in pot, stirring until sugar dissolves. Simmer 3 mins. Take off heat and stir in lemon juice. Pour into 6-8 ramekins and chill until set (about 4 hours).

Lolly Cake Don't think I saw this one in the thread yet... 1 packet malt biscuits, 1 paket eskimo lollies/fruit puffs cut up, 115gm butter, 1/2 tin condensed milk, coconut to garnish. Melt butter and condensed milk. Add crushed biscuits and lollies. Mould into log and roll in coconut. Set in fridge.

Kell's Choc Cake I have made this 100 times,,,,so easy! 50gm butter, 2 tsp golden syrup, 1/2 cup sugar, 1 egg, 1 cup flour, 1/2 tsp baking powder, 3/4 tsp baking soda, 3/4 cup milk, 1tsp vanilla essence, 2 Tblsp cocoa. Melt butter and g.syrup together on HIGH for 45 seconds. Mis in sugar, then egg. Add flour, cocoa, b.p, and soda dissolved in milk and vanilla essence. Mix well pressing out lumps. Pour into 20cm mould ring, cover with sheet of waxed paper or paper towel. Microwave on HIGH for 4 minutes. Cool on rack and ice.
