tebb, re gluten free shortbread, I used the Edmonds recipe using orgran flour, 1:1 replacement of standard flour, and it came out an absolute treat. No real discernible difference from normal shortbread.

I have spent the last few days slowly going through this and other GF threads.
What a mission, but how interesting.
I do not have coeliac disease, nor have I been diagnosed as being gluten intolerant.
I do know that my body feels a lot better when it isn't bombarded with gluten.
I have also been toying with the idea of trying gluten free/ low gluten foods for my son who has autism.
I have trialled a few things, and thought I would share.
First, I made the LSA microwave loaf which was posted on here.
I don't think my son would eat it, and when I make it again I will try it with a bit of salt.
I have made two things which turned out great.
One, the chocolate courgette cake (recipe recently bumped I noticed) which I have made for years. Simply substituted GF flour for flour.
I also made the potato boston bun. It was a little denser than the ones I usually make, but otherwise great.
It is so hard to find things for kids lunchboxes.

I'm going to try some slices. I would like to have some 'crunch' in the base.
Thought I might try some amaranth or quinoa flakes.
I love ginger crunch.
Ideally I would like not to have to but the really expensive GF products.
Here is the potato Sally lunn. So simple. I just throw it in the oven after a mashed potato meal.

Sally Lunn"
3/4 cup sugar,
1 cup of cold mashed potatoes,
pinch of salt,
2 cups flour,
2 teaps baking powder,
1/2 cup of sultanas,
about 1/4 cup milk.
Cream sugar & potato together thoroughly. Sift flour, salt & Baking powder together and add to potato mixture beating well, stir in sultanas, add sufficient milk to mix to a smooth dough.
Form into round cake and place on greased try. Bake at 180c for 25 to 30 mins.
Ice when cold with pink icing and sprinkle over with coloured sprinkles.

The other day I made fantastic GF tamarillo upside down cake for desert using fruit from freezer. However, today I made some GF savoury scones and they were horrible. Will try another recipe for them.

lavender puffs:

1/2 small bottle of cream, 5 tablespoons of sugar, 2 teaspoon vanilla essence - mix this all vigorously until sugar dissolved - or mostly. chop finely lavender leaves - a tablespoon full, and two flowers. mix in.
Mix in 5 tablespoon custard powder (edmonds) and about 1 1/2 cup bakels bread baking mix. to form a wet biscuit dough. roll into balls using custard powder to dry outside so is managable and flatten onto greased tray. bake 180 celcius for about 10 minutes until golden and risen.
these were a put together of what was in cuboard mixed with t.v inspiration and are actually really nice : ) nice tea cake sort of things. they were meant to be biscuits but bread mix apparently rises lol. so could replace for normal flour (gf flour i mean) to get shortbready bikkie

hi, i am new to being a coeliac member, i have suffered for 2 years with intense pains that see me in hospital, vomiting blood at time and all they did was think it was gall stones or constipation. finally the specialist did a gastroscopy and woo hoo i got a diagnosis, my bloods had always come back negative btw. the pian would be gone for weeks and then wham id be in bed on tramadol and codeine to dull the pain. it got to the stage where i didnt bother going to the doctor anymore as they would just morphine me up to dull the pain and send me home and then it would be back with avengance when the morphine wore off... i just dosed myself and the kids and hubby manages without me.
i rand winz yesturday as i was told i could get a subsidy but apparently 50K is too high an income to qualify! there are 4 of us in my family and my 8 year old son and i are fighting the doctors now to get him a gastroscopy to be diagnosed as well as he suffers like me and always has a sore tummy and diarhoea but at least his pains are not as intense as mine......
i want to say thanks so much for all these recipes and hints, as the books are so expensive and i have no idea where to start!

There is a gluten free book out at new world,I think it is called gluten free cooking,I have seen vol one and two.
I think it is put out my the Healthy food book,you get once a month.
The cost for the books are $12.00.

Here ya go ,works well but with Vogels GF Bread no longer needed

3 heaped Tblspoons of lsa
1 heaped tblspoon of any gluten free flour
1\4 tpspoon of baking powder
mix together and then add.....
one egg and splotch of water.

mix well together and then stick in bowl small like size of burger bun .

put in mircowave for 2mins and walah awesome 2 min bun, or slice for toast .

Discovered Pam's Pumkin Cup of Soup at Pak N Save on the weekend listed as having a trace of gluten unlike others in the range.I had no probs so I suspect the trace is just to cover theirselves

I tried going off gf,but was so silly,started bleeding from the bowel,have ceoliac,just not worth it.
I enjoy having quiches make up a huge batch and put in freezer,also mini pizzas good to take to work.
I have to start again,and get some recipes written out again.
I also like salads and meat for a change.

Know what you mean ,I believe many coeliacs can tolerate oats but I sure as hell don't intend trying them

Have you looked at dr fords lunch box ideas,he has a few books out,there is also gf sausages,cherrios,mini pizzas,Kebab snacks,plain pop corn,corn chips,all in his book,hope this helps.
I work 3-11,so take baked veges and meat,boiled eggs,salads,gf wraps ect.

1/2 tsp baking soda

Method

Preheat the oven to 180°C.

Cut the butter into 3-4 pieces and place in a medium-sized pot along with the chopped chocolate. Heat over a medium-low heat, stirring frequently, until the chocolate has just melted.

Remove the pot from the heat and stir in the sugar, then break in the eggs and add the vanilla essence and stir until smooth and evenly combined. Sift in flours, cocoa powder, guar gum, baking soda and salt then stir until well combined. Fold in the walnuts, if using.

Line an 18x28cm brownie pan with baking paper, then pour in the brownie mixture.

Bake in the middle of the oven for 25-30 minutes or until a skewer poked in the centre comes out clean.

Remove from the oven and allow to cool in the pan for about 5 minutes before removing from the pan and cooling on a rack.

Cut as desired, then dust with icing sugar before serving.

Dairy free cheese.
Hi guys I am missing cheese,but am dairy free,and feeling so much better,was wondering if there was a dairy free cheese out there besides goat milk cheese.
I am enjoying soy yoghurt,but need a replacement for cheese.

There are a few dairy free cheeses around now. None are exactly the same as cheese but they are good in their own right. Cheezly is good. They have a blue cheese that tastes quite like the original. Kings I think it is called have a cheese also. Scheese make a few, some I like some I dont.
There is a stretchy mozarella type dairy free cheese made either in Canada or USA that gets great reviews. I guess we will get it here one day. I find the dairy free cheeses are best with strong flavours like caramelised onion, relish etc. You will find them at your health food shops
or online. Bryanna Clark Grogan makes good vegan cheeses, you will find recipes for them on her blog. Her feta is brilliant.

You were lucky EA as when I spent a night in Grey Hosp a couple of months ago they were told no rolled oats or toast and what did I get> R/O and toast. I left there very hungry when they tossed me out without even a wash. Went to the Bonsai where they made me a lovely GF toasted salad with a wee salad before travelling home.

HI Glenn-ellyn,I spent some time in Christchurch hospital,I should of said that,and yes Greymouth hospital is not a good hospital to be in,and yes I agree with you,they are hopeless.
I was very lucky as my dp,came in every morning,it was him that got me flown to Christchurch,otherwise I would of died,not the best hospitals to be in.

Choc Chip Cookies
I made these last week and they are from www.elanaspantry.com all her recipes are gluten free as she is a coeliac and she tends to use almond flour as her base as it doesn't cause blood sugar to rise as much as grains. Almond flour is cheaper in USA than here but I buy in bulk for $18 per kg and keep in fridge and freezer.
2 cups almond flour (or you can grind your own)
1/4 tsp salt
1/2 tsp baking soda
1/4 cup butter or coconut oil
2 Tbs honey
1 Tbs vanilla extract
1/2 cup chopped chocolate chunks/chips whatever you like.
I did mine by hand in a bowl but this is the original recipe:
Place almond flour, salt and baking powder in a food processor.
Pulse in shortening, honey and vanilla until dough forms.
Remove blade and stir in choc by hand.
Scoop dough one level tablespoon at a time onto baking paper lined tray.
Press balls down gently.
Bake 180oC 6-8 mins.
Cool for 15 mins before moving otherwise they will break.
She said that this made 30 but it actually made 18 and I used a proper tablespoon measuring spoon.
Very nice.

I have a recipe from a gluten free site,that I am on.
In the recipe they use gluten free self rising flour,I have never heard of this.
Would anyone know the name of the flour please.
