Apricot and Ginger Slice
00gr butter
3/4c Condensed Milk
1c finely chopped apricots
1/2c finely chopped crystallised ginger
1c desiccated coconut
1tsp gr ginger
2TBSP lemon juice
Pkt plain crushed biscuits
Base: place butter & cond milk in a suacepan & heat gently until butter melts. Remove from heat.
In another bowl mix apricots, ginger, coconut, gr ginger & lemopn juice.
Add crushed biscuits & combine
Add butter & cond milk mixture, stirring well.
Press into a tin & chill until set.
Icing: 50gr butter, 3TBSP boiling water, 1tsp lemon juice & 3&1/2c icing sugar
Spread over base & garnish with crystallised ginger & chopped pistachios (opt)

have made Gooseberry slice from the Otago Farmers Market Book. It is delicious.

250g chilled butter , chopped
250g self-raising flour
125g ground almonds
125g light muscovado sugar
350g gooseberries , fresh or frozen
85g caster sugar , plus extra
50g flaked almonds

Heat oven to 190C. Line a 27 x 18cm baking tin with baking
parchment.

Rub the butter into the flour, almonds and sugar to make crumbs, then firmly press two-thirds onto the base and sides of the tin. Toss the gooseberries with the caster sugar, then scatter over the top of the crumb mixture.

Mix the flaked almonds into the remaining crumbs, then scatter over the gooseberries. Bake for 50 mins-1 hr until golden and the fruit is bubbling a little around the edges. Dredge with caster sugar, then cool in the tin.

American Chocolate Fingers: 250g butter, 3c flour, 250g brown sugar, 2 tsp baking powder, 2 beaten eggs, 2 tbsp cocoa. Mix together and press half the mix into a greased long sandwich tin. Spread with the following: beat the white of 1 egg, add 1 tbsp caster sugar, 1c coconut, and ¼c milk. Press remainder of cake mix on top and bake 20 minutes in moderate oven. Ice with chocolate icing and cut into fingers.

American Snickerdoodles: Makes 36 biscuits. 90g butter, 1 tsp cinnamon,
¾c sugar, 1 egg, 1 tbsp extra sugar, 1-11/3c flour, 1 tsp cream of tartar, ½ tsp baking soda. Cream butter and sugar, add egg and beat well. Sift together flour, cream of tartar, and soda and stir into mix. Roll into small balls, then roll in mixture of sugar and cinnamon. Place 5cm apart on a cold greased tray, do not flatten. Bake at 200C for 8-10 minutes.

Favourite Biscuits: Makes approx 70. 1c sugar; 2 tbsp maltexo or golden syrup; 220g butter; 1 tsp baking soda; 3c flour. Put sugar, maltexo or golden syrup, butter and baking soda into a saucepan and melt. Remove from heat and add flour. Mix well. With a tsp place on an ungreased tray. Bake from 8-10 minutes in mod oven, 175C.

bev00, in the apricot and ginger slice above, how many grams of butter is it really? I appreciate a low-fat recipe, but somehow I get the feeling there really is supposed to be butter in it?

Toni's Oaty Slice:
Dry Mix:
1 cup muesli
1 cup flour
1/2 cup wholemeal flour
1 tsp baking powder
1 tsp baking soda
11/2 cups rolled oats
3/4 cup coconut
1 cup brown sugar

Wet mix:
2 small eggs, lightly beaten
1 shot espresso coffee or 30 ml strong coffee
11/2 tsp vanilla essence
125 g butter, melted

Caramel:
50 grams butter, diced
1x 400g tin condensed milk
2 tbps golden syrup
1 tsp vanilla essence
1/2 cup dried apricots
1/4 cup pumpkin seeds

First, make caramel. Melt together butter, con milk and golden syrup in microwave in 2 x 2 minute bursts, stirring in between, then add essence.
Place mixed dry ingredients in a mixer and add wet mix. Stir well.
Press 3/4 of the mix in a greased slice tin. Spread the caramel mixture, sprinkle diced apricots and pumpkin seeds, then scatter remaining base mixture over the top.
Bake at 180 for 30 minutes.

I got this off Baking makes things better

Ingredients:
½ cup butter
1 cup sugar
¼ teaspoon salt
1 large egg
1 ½ teaspoons vanilla extract
1 cup all purpose flour
½ teaspoon baking powder
1 cup chocolate chips (I used ½ a cup of milk chocolate drops and ½ a cup white chocolate drops).

Method:
Preheat oven to 180°C. Line a 20x20cm tin with baking paper.
In a large bowl, cream together butter and sugar until light.
Beat in salt, egg and vanilla extract until well combined.
Add in flour, baking powder and choc chips and stir until no streaks of dry ingredients remain.
Pour dough – it will be thick – into prepared baking dish and smooth it into an even layer.
Bake for about 30 minutes, until set and the edges are just very lightly browned.
Cool in the pan before slicing.

For Snickerdoodle Blondies, leave out choc chips and mix together 1 tablespoon sugar and 1 teaspoon ground cinnamon, then sprinkle over dough before baking.

it is really tasty and the kids love it, have used chocolate chunks as well as chocolate chips, and is really scrummy warm too

All these recipes look sooo yummy, does anyone here have a favourite noncooked slice recipe which is quick and easy to 'throw together' and pop in the fridge? Whether iced or uniced, it would be very welcome :)

Not too sure if this is the place for the following recipe, it is very nice, even those whom do not like cheesecakes love these.

A Yummy Slice like a Cheesecake - but no cheese and no cheesy tastes!
1 Packet (250g) Plain Biscuits Crumbed
125 to 150g butter softened and mixed with biscuit crumb and to form the base by pressing into a greased tin.

When preparing the tin, line it with baking paper greased, but to allow a little to overhang each side of the tin, so when ready to cut and serve, just use the this overhanging paper to lift out of tin, place onto a nice serving dish or board, peel down the sides with the paper and use a nice long thin knife (like a Ham knife) and cut into nice serving portions.

This is far better than trying to dig out that first piece or two. Refrigerate for an hour at least.

Beat about 900grams to 1kg Sour Cream (or yoghurt, or a Ricotto and sour cream combination and to be blended).
Add enough castor sugar say about 350 to 400 grams, mixed in and dissolve, check taste and add more sugar to suit taste.

In a separate bowl, mix 4 tsp gelatine in some boiling water to dissolve clear.

Likewise – ½ packet flavoured Jelly Mix (Raspberry goes well with Strawberries) in hot water and dissolve.

Allow both to cool, then mix all together and spread over base. Mixture is quite runny.
Refrigerate to set or near setting.

Topping is made of 1 to 1 ½ tsp gelatine plus the other half of jelly mix dissolved in enough boiling hot water. Once again allow to cool near setting but not set!

If Strawberry topping then slice some strawberries in half lengthwise, placed on top of filling cut side down then spread the topping over.

Allow to set in the fridge covered.

Flavours in topping can vary using other fruits or berries.

For an Oreo type cookies and cream, leave out all of the jelly mix, add another tsp of gelatine and use broken small pieces of the cookies into the filling mix.

One may use any types of flavours desired and altered to suit.
