Coconut Blueberry Bread

6 Eggs
3/4 Cup coconut flour
1/2 Cup coconut oil
1 Cup dried blueberries
2 Tbsp honey
1/2 Tsp sea salt
1 Tsp baking powder

Preheat your oven to 180 degress
Mix eggs, oil, honey, and salt (melt the coconut oil first)
Combine the coconut flour and baking powder and whisk into the batter until there are no lumps
Pour into a greased loaf pan; bake for 40 minutes
Remove from pan and cool on rack

Blackberry Bars

1 cup coconut flour
1/2 cup shredded coconut
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup sugar/agave/maple syrup/honey/sweetner of choice
2 bananas (about 1 cup)
2 eggs
2 tbsp coconut oil, melted
1 tsp vanilla extract
1/2-1 cup almond milk
1 cup blackberries, fresh or frozen (or berry of choice)

Preheat oven to 180 degrees. Grease a baking pan.
In a bowl, mix coconut flour, shredded coconut, cinnamon, baking powder and soda, and salt. Add in the sugar (or substitue, mixing again.
Add in the bananas, eggs, melted coconut oil, vanilla extract, and 1/4 cup almond milk. Mix until all ingredients are incorporated, adding in more almond milk, as needed for mixing.
Fold in the blackberries and spoon the batter into the greased pan. Bake for 40 minutes or until the sides are golden.
Remove from oven and cool. Cut into about 16 squares.

Tastes Devine Brand "BBQ Pork Rib mix" is gluten free and absolutely delicious. I bought it from Fresh Choice in Merivale Mall but I haven't seen it anywhere else. It is not even on their website. You just sprinkle the spice on raw pork ribs and leave it in the frdge for an hour then bake them without adding anything else. The "mix" goes all sticky and brown and it really does taste devine. Well worth trying to source this in your area.

Carrot Salad

4 cups shredded carrots
1/2 cup raisins
1/2 cup pineapple, finely diced
1 cup mayonnaise, preferably homemade
Salt and freshly ground black pepper, to taste

Toss the carrots, raisins and pineapple in a large bowl with the mayonnaise until mixed. Taste; season as needed.
Refrigerate for an hour to allow the flavors to blend. Serve cold.

Sweet and Sour Cabbage

1 medium head red cabbage, thinly sliced
2 tablespoons olive oil
1 large Granny Smith apple, sliced
1 medium yellow onion, peeled and thinly sliced
2 teaspoons kosher or sea salt
1 teaspoon freshly-ground black pepper
1/2 cup apple cider vinegar
2 tablespoons honey

Heat the olive oil in a large pan over medium heat.
Add the cabbage, onion and apple; cook until the cabbage begins to soften and the mixture reduces slightly, about 10 minutes.
Add the salt, pepper, cider vinegar and honey; turn down heat and continue cooking, stirring occasionally, until the apple and onion are very soft and the cabbage has reduced by about half.
Taste, season with more salt and pepper if needed, and serve.

Creamy Scrambled Eggs with Goat Cheese and Basil

1/2 tablespoon butter
2 large eggs
40g soft goat cheese, broken into small pieces
1/2 tablespoon fresh basil leaves, thinly sliced
pinch kosher or sea salt
2 or 3 grinds black pepper

Melt butter in a small pan over low heat.
In a small bowl, whisk the eggs, salt and pepper together with a fork.
Pour the eggs into the pan; immediately begin stirring with a spatula. Stir constantly until the eggs are creamy but almost set. Remove from heat and stir in the goat cheese.
Sprinkle with the basil and serve.

My 7 year old Coeliac loves this cheese ball, the whole family does! It's from the "Kiss Diet".
Toasted Sesame Cheese Ball

150 gm grated Tasty or Cheddar Cheese
125gm Cottage Cheese
2 Tbsn Apricot Chutney
3 finely chopped Spring Onion (I use 4)
4 tsp mayonnaise
4 Tbsn Toasted Sesame Seeds
Salt and Pepper

• Mix all ingredients but the sesame seeds in a bowl and form into a ball.
• Sprinkle grease proof paper with the sesame seeds and gently roll the ball in the seeds until it is well coated.
• Chill well before serving with sliced Carrots, Celery and crackers.
Can make the day before if you need.
I took it to a coeliac lunch get together and all loved it.

Hi guys,

I was hoping you could help me with some recipes, my 2.7yr old has to go on to a wheat free diet, he also reacts to rye, nuts (all types), almond and hazelnut, eggs.

i have swapped a lot of his food out for wheat free or gluten free stuff, and i do have an appointment with the dietician next month but am after some yummy recipes.

He can have egg in baking, but can not have egg whites (but can have egg yolk) and no nuts at all

Dana's chocolate cake
Heat oven to 180 degrees C.

I iced it using a butter icing

just a thought .. maybe your two kids might be intolerant to shulpites ? i can't have bacon or deli meats, or deli salads, dried fruit , or wine etc because i am intolerant to shulphites .. Might be something for you to look into ...?

just came back from supermarket adn sure enough gluten free sausages contain shulprites .. so do marinated pork steak as does plain chicken kebabs ... so frustrating. However i did buy some gluten free SR flour so i can at least have some sweet corn fritters!
there is a bacon you can get that is shulprite free ..can't remember the name of it ..hendersons perhaps?
i did buy some salami tonight tho, its made by delbos, its in a vacum pack [that isn't in the fridge ] and its preservative and gluten free... it has two fat sticks and is worth $9. ... you can either get hot or mild.

I don't know what shulprites are. Do you mean sulphites? I think Henderson's Free Range Dry Cured bacon is suphite-free but you would need to check the label.

have you guys tried your local butcher (if you have one),my own does his own gluten free sausages etc with all the additives and sulphites...sure costs a little bit more something like $1.50 a sausage but they are yum (and this from someone who isnt gluten free)

Just a little tip: You need no flour at all to make sweetcorn fritters.

You just cut the raw corn off the cob and either leave it whole or throw it into the food processor for a finer version. Add anything you like - I add lots of freshly cut herbs, finely diced onion and finely sliced bacon for more flavour, salt, chilli etc. Then add lots of eggs.

You can now fry those into small little fritters or - even more easy - pour the lot into a very hot fry pan (use one that has steel handles) and then top with tomato slices and cheese and pop into the oven.

Great hot with a salad and the leftovers are excellent cold for next few days lunches. Just pack a few tomatoes to go with it.

yup sulphites is the correct spelling :)
yes it was hendersons brand.

Hope you like them - I had some wwoofers that wouldn't eat most of my food (LOL) but they loved those fritters, so every second day that is what they got! In between they needed carbs with carbs :)

These recipes look great.....very happy to have found this site, looking forward to trying a couple of these recipes..I started another thread asking if anyone was on the gaps diet (no gluten, low dairy, no sugar.....) but not heard anything yet. Good luck everyone....I know I have had plenty of recipes totally flop!! lol But well worth it when one turns out great..and the whole family loves it :)

Hi My 15yr Daughter is cealiac[Gluten Free}, & We are going to make a lollie Cake using rice cookies Arnotts, They cost $3.60, which is not to bad. it's hard for her when she goes to b-day parties etc.. Believe it or not her mates love the Gluten Free Choc Cake. Thanks for some Tips on here. Didn't Know about Maggie Chicken Stock. I still think they shouldn't make Gluten Free products so expensive. Does anyone know where I can buy Casalare GF Flour from? I use the Bakels brand at present but a GF cafe recommended the Casalare & said it was far superior.

Well all the food & slices in her cafe were all pretty yummy. We had 10 different things between the 8 of us. :-) An Auckland cafe that is nice enough to have a lot of GF recipes for those of us that are GF intolerant etc.

What is the name of that cafe please? Cottage cafe on brown's bay do an almost full GF menu, but not many other places out there have too much to offer, and now with Marx bakery having shutdown there is very little in the way of bakery/cafe style treats around : (

Trying to think of name..Street behind Huckleberry's in Greenlane. Side street. Back entrance road of The old National Womens Hosp.
Another VERY good one is The Library Cafe. Very good meals & nice for a cuppa & slice. I would go there as it is nicer & bigger & lovely setting. :-)

Auckland is not very good for gluten free products I have found. It is getting better with cakes, slices etc but very little in the way of savoury items.

Greenlane, cool I'll find it. I've heard about a fish and chip store somewhere in Manakau I think that does a lot of their products GF, not sure of the name but they were mentioned in the NZ Herald for having 1st or 2nd best fish and chips

Gluten Free Chocolate slice - really yummy
I cup Orgran SR Gluten free flour
1 cup dessicated coconut
1 cup brown sugar
125 gm butter
Place dry ingredients in a bowl then add the melted butter and pour into a sprayed 18cm x 28 cm tin. Flatten the mixture out by pressing down hard with your hands. Bake 10 minutes at 180 C.
Meanwhile melt 2 tins sweetened condensed milk in a pan with 60 gms butter and 4 tablespoons golden syrup. Spread on top of cooked hot base and return to the oven for a further 10 minutes. Now melt 1 375 gm milk chocolate melts with 2 tbsp butter and then spread over the slice. Cut while warm. Absolutely delicious - enjoy!
