811 | Boysenberry Brownie http://www.foodinaminute.co.nz/Recipes/Boysenberry-Chocolate -Brownie I made this for the family and it was a HUGE success. Everyone LOVED it. I only had 2 eggs so I substituted 1T golden syrup for the missing egg. It's the first time I've made it so not sure how much difference the golden syrup made but I can recommend the addition of it. The syrup was not that popular really though. I'm not a huge huge fan of boysenberries so next time I make this I am going to try it with raspberries I think. Or maybe dried apricots and white chocolate pieces. Mmmmmmm Edited to add: mine didn't look anything like the picture but it tasted good. Oh, I remember a delicious one very similar to this, published in the cuisine magazine years ago. It was yummo .......I'll see if I can find it. 849 | This may be the one you are after, Rocky Melon 3/4 c sugar 1c flour 2 tblsp cocoa 2 1/2 crushed weetbix 1 c coconut 1 tsp baking powder 6oz melted butter Mix all together and press into flat tin, Bake 15 mins in moderate oven. Allow to cool. Topping Dissolve 2dstsp gelatine in 1c boiling water. Add 2c sugar and beat well, until thick and fluffy.
