hi brianmac, I was wondering are you the "5 cup slice" lady? I made this for my family about 4yrs ago from a message board recipe. My 15yr old has requested this for his "home baking" for his rowing regatta this weekend.

I made this for the family and it was a HUGE success. Everyone LOVED it. I only had 2 eggs so I substituted 1T golden syrup for the missing egg. It's the first time I've made it so not sure how much difference the golden syrup made but I can recommend the addition of it. The syrup was not that popular really though. I'm not a huge huge fan of boysenberries so next time I make this I am going to try it with raspberries I think. Or maybe dried apricots and white chocolate pieces. Mmmmmmm
Edited to add: mine didn't look anything like the picture but it tasted good.

lemon squares

base
2 cups standard flour
1/2 cup icing sugar
125 gm cold butter

topping
1 1/2 cups sugar
rind of half lemon
3 large eggs
1/4 cup lemon juice
1/4 cup self raising flour

heat oven to 160 or 150 fanbake
line 23cm tin with one piece of paper uncut sides or mix will run out

for base
process ingredients and press into tin use the back of large metal spoon as mix is very crumbly
bake 15-20 mins till straw colored
while it cooks make the topping

put sugar and rind in the unwashed processor and blitz till fine
add eggs and lemon juice and flour
process till smooth

when the base is cooked pour mix over and cook for a further 30mins or longer, until the top is slightly brown and no longer wobbles when pan is jiggled

when completely cold , slice and dust with icing sugar
yum!
the topping is lovely and creamy lemon without being to messy to handle

I made this for the first time yesterday, I used hazelnuts, they were raw so gave them bit of time in dry frying pan then rubbed skins off. No salt on them.

Ginger Crisps
1/2 lb butter(250 grams)
12 Oz flour (375 grams)
1 tsp ginger
1 tsp baking powder
6 oz brown sugar(175 grams butter)
6 oz sultanas or raisins(I use raisins)(175 grams butter)
1 good tbsp golden syrup
Method:Cream butter and sugar and add golden syrup and rest of
ingredients and mix well.Roll into balls and flatten.Bake 350 oc (180 degrees) for 15 minutes

Oh, I remember a delicious one very similar to this, published in the cuisine magazine years ago. It was yummo .......I'll see if I can find it.

Edit: success, I found it but I can't be bothered adding it here as it is so similar, although it has 225g of butter so almost twice as wicked.

Does anybody have the recipe for rocky mellow slice? I used to have it but I lost the recipe. It had a weetbix base. Appreciate any help.

This may be the one you are after,
Rocky Melon
3/4 c sugar
1c flour
2 tblsp cocoa
2 1/2 crushed weetbix
1 c coconut
1 tsp baking powder
6oz melted butter

Mix all together and press into flat tin, Bake 15 mins in moderate oven. Allow to cool.

Topping
Dissolve 2dstsp gelatine in 1c boiling water. Add 2c sugar and beat well, until thick and fluffy. Colour yellow ( can use a drop of red instead,) add vanilla and pour over cake. Sprinkle with coconut.
