Chicken with rice
Ingredients
1 tablespoon oil,
2 boneless and skinless chicken breasts, thinly sliced ,
1 onion, chopped ,
3 cloves garlic, crushed ,
400g can chopped tomatoes ,
1/4 cup crunchy peanut butter ,
1 tablespoon curry powder ,
3 cups chicken stock ,
1 1/2 cups basmati rice ,
1 large pinch thyme ,
1/2 teaspoon salt ,
Heat the oil in a large saucepan. Shake maize cornflour over chicken slices) and cook the until brown then set aside. Add the onion and garlic to the pan and cook till soft. Return the chicken to the pan and mix in the tomatoes, peanut butter, curry powder and thyme and mix well to disperse the peanut butter through the mixture.
Add the chicken stock and bring to the boil. Cover and simmer 20 minutes. Serve on rice.

Lemon Chicken
4 single chicken breast fillets
2 egg whites, lightly beaten
1/2 cup plain gluten free flour
30 g butter
2 tablespoons vegetable oil
1 1/2 tablespoons maize cornflour
1 1/4 tablespoons brown sugar
1/2 cup lemon juice
1/2 teaspoon grated ginger
1 teaspoon tamari soy sauce
1 cup gluten-free chicken stock

Bang the chicken between sheets of cling-wrap until 1cm thick.
Dip chicken in the beaten egg white and then coat in plain gf flour Shake off any excess flour.
Heat the butter and oil in a large frypan. Cook chicken until lightly browned on both sides and cooked through. Drain on absorbent kitchen paper.
Blend the cornflour, brown sugar and the lemon juice in a small saucepan. Add the grated ginger, soy sauce and the stock. Bring the sauce to the boil and stir constantly until the sauce thickens.
Slice the chicken,serve drizzled with the sauce and some extra lemon wedges or slices.

Yes I make it often. I use organic rolled oats with it though so if you are ok with oats will not be a problem. Am sure it will be fine without the oats, will just be more like a crisp rather than a crumble.

Being Coeliac I am always looking for things for morning tea.I make the following which is not bad but very crumbly(probably because of the GF flour) can anyone suggest what to add to make it more solid.I tried reducing the sugar because it seems excessive but this made it more crumbly

1/2 tsp baking soda
3/4 cup gluten free flour
1/2 cup brown sugar
1/2 cup coconut
1/2 cup crushed cornflakes(GF)
1/2 cup rice bubbles(GF)
1/4 cup sunflower seeds
1/4 cup sesame seeds
1/4 cup chopped nuts
1/4 cup pumpkin seeds
1/4 cup sultanas
Melt the butter, sugar and syrup together.
Put all the other ingredients into a bowl. Mix well
Make a well in the middle of the dry ingredients. Add butter mixture. Mix well.
Press mixture into a swiss roll tin.
Bake at 160 degrees C for 15-20 minutes, or when golden brown.
Slice when still warm.

hey everyone, i made danas chocolate cake, and made it gluten free, using healtheris baking mix, the cake normally rises very high, gluten free it does not but instead it comes out fudgey like, honestly to die for yummy!!!!!

Dana's chocolate cake
Heat oven to 180 degrees C.

Beat together - 100 g melted butter, 2 eggs, 1 1/2 cups sugar, 1 teaspoon vanilla, 1 teaspoon salt and 1 1/2 cups milk.

Sift together 1 1/3 cups flour, 1 1/2 teaspoons baking soda - NOT BAKING POWDER. and 2/3 cups cocoa.

Mix these dry ingredients into wet mixture. It is possible to do all this using a hand beater or just a spoon as the batter is quite thin. The cake will rise a lot.

Bake 40 - 50 minutes.

To make gluten free using gluten free flour and cocoa – it will take 35-40mins to cook and wont rise the same as the non gluten free version.

I iced it using a butter icing

Jum,motorbo,would love your recipes,sounds nice,also I read someone post in here about being on gluten for a couple of weeks,not sure whom it was,but I had to be gluten for 6 weeks before tests were done,had not a very nice time,rash on skin,gritty eyes,bad tummy pain,toilet issues,bed rotten gas lol runny ichy nose and stuffy nose,no sleep,all due to coelaic not nice others,everyone is different,I so feel for you all.

sorry earthy haven't got a gluten free banana bread but this is a good gluten free banana loaf recipe I use. 125 gm butter or olivani dairy free spread, 1 cup sugar, 1 egg, 1 tsp baking powder (GF) 4 tbsp milk (I use So good) 2 very ripe mashed bananas, 1½ cups Bakels Flour, 1½ tsp Baking Soda. Cream butter and sugar, add egg beat well. Now add mashed banana, flour and baking powder. Dissolve baking soda in milk and add. Bake 160 C for ½ - 3/4 hour. Sometimes I place chopped sunflower seeds on top before cooking. Enjoy

while in a chat room on a craft site, I spoke to a middle age women (frm UK) with the same disease as me, she told me of a a trip to the wholesaler (eg- our bin inn) where she passed the Wheat flour bin to get her to "flours",she my the pass weekly, b4 she returned to the check out this day, she started itching sneezing coughing etc, this had happened at different times in other shops on several trips. she could not work it out! at the check-out that day she mentioned her problem and the knowledgeable young lady said "We've had a run on W'flour today and i filled that bin not ten min ago" her face lite up as my chat-buddy realized exactly wot set her off!!!
click the penny dropped, passing thru the baking isle and at times, bakerys had been the issue for her she was BREATHING it in, unseen is not just on the packets.................(oh yes I've asked my Dr) ......................My point? I'm So gratefully I'm not that bad!!!

By the way she has 3 kids, Coeliac's was picked up in her 3rd when she went on formula, and at age 9 in the 1st born.

my gratitude and many thanks to MELFORD plz keep it up :-)

Amen and as Coeliacs,doctors say if we do not stay gluten free in time,we could end up with bowel cancer,thanks so much for this information,and yes amen to Melford she is our treasure.

Chicken Bacon & Prune Breasts

Slice chicken breasts almost in 1/2 lengthways. Spread with a layer of Country Goodness cream cheese. On top of that lay 4 chopped prunes. Close chicken breast and then wrap around GF Beehive streaky bacon. Sprinkle with ground black pepper. Bake 160 C about 40 minutes (If chicken breasts are big all one to serve two people as they are so filling.) Enjoy!

You need to watch all sauces,brandies,wines,corn,eve-
n belt dusted wheat flour.
I use bosses sauces,and big red greggs tomato sauce,if I get as much as a crumb,I live in the toilet,I have ceoliac disease,not sure how bad you are.

I haven't read this whole thread coz it is so long! I am a newly diagnosed coeliac....am waiting on my subsidy number to come through. Am also a vegetarian. Above it says to watch out for wines etc? The dietician informed me the only alcohol that contains gluten is beer....I haven't had any reactions from wine, and don't drink beer...though on the weekend I had a reaction from the boys cleaning the BBQ with beer (they forgot about me!). It seems I am alot more sensitive than my 2 sisters, also diagnosed.

Hi kizzier wine is fine and you can buy a gluten free beer although it is a little pricey.When you get your subsidy number you may be a little disappointed,I get flour on prescription but the amount I pay is equal to supermarket price .

For Aucklanders in East Tamaki there is a store called Why Knot specialising in out of date or near end of date lines.They have lots of Gluten free stuff including Hubbards cereal at $3 a packet
