Louise Cake
(One does this one quite a bit and is always well liked, the base has a nice firm but softish bite.)

150g Butter softened not melted,
¼ cup sugar,
4 eggs size 7 separated,
2 ¼ cups plain flour,
2 teaspoons slightly heaped Baking Powder,
1/4 to 1/2 tsp vanilla essence
½ jar (about 225 to 250 grams) Jam raspberry or whatever
(prefer Black forest),
½ cup sugar extra,
2/3 cup coconut.
Using electric beaters cream butter & first measure of sugar until light and fluffy.
Beat in egg yolks only.
Sift flour and baking powder together.
Stir sifted ingredients and vanilla into creamed mixture (should be like a crumbling dry mixture).
Press mixture into a shallow baking tin that is lined with greased baking paper (also helps in lifting out slice upon cooled and cut).
Spread jam over this base mixture.
In a dry bowl with electric beaters, beat egg whites until stiff but not dry.
Mix in extra sugar and coconut.
Spread this over the jam.
Bake at 180c for 30 minutes.
Cut into squares while still slightly warm.
When cooled, lift out.

1/2 c Walnuts; 1/2 c Preserved Ginger, coarsely chopped;
125 g Butter; 1/4 c Sugar; 3 Tbsp Cocoa; 1 tsp Coffee Powder;
1 tsp Vanilla Essence; 1 Egg

Icing:
1-1/4 c Icing Sugar; 2 Tbsp Cocoa; 1 tsp Coffee Powder; 1 tsp Vanilla Essence
75 g Butter; Hot Water

Finely crush wine biscuits & gingernuts.
Put biscuit crumbs, walnuts & ginger into a bowl.
Melt the butter with the sugar, cocoa & coffee powder.

Grease & line a swiss roll tin. Press mixture into prepared tin,

Chocolate Mocha Icing:
Sift icing sugar, cocoa & coffee powder into a small bowl. Stir in the vanilla essence. Add to sifted ingredients. Stir in enough hot water to give a soft spreading icing.

Ginger Crinkle Biscuits

2/3 cup oil, 1 cup sugar, 1 egg, 2 cups flour, 2 teasp baking soda, 2 teasp ground cinnamon, 1 teasp ground ginger, 1/4 cup treacle, extra 1/4 cup sugar.

Preheat oven to 180C. Beat together oil, sugar, egg & treacle. Stir in sifted flour baking soda and spices. Roll spoonfuls of mixture into balls and roll in extra sugar. Place onto greased baking tray and bake for 10-15 mins. These biscuits flatten and crinkle by themselves.

Note: - I made these yesterday and they are great, it is a recipe from Chelsea sugar. We found them a little too sweet for us so I will cut sugar next time, I also used 3 teasp gd ginger instead of 1 and added 1/4 cup chopped crystalised ginger with flour as we like them very gingery
