Hi... great thread! does anyone have a recipe for Coconut Loaf? used to have it (hand written so not sure what recipe book it came from) but cant find it now?

Here ya go COCONUT LOAF
2 lg eggs, 1 tsp vanilla ess, 1/4 tsp almond ess, 1/4 tsp salt, 1&1/2 cup milk, 1&1/2 cup coconut, 1&1/2 cup sugar, 2 cups self raising flour. Mix wet ingredients until combined. Add dry ingredient & gently mix until just combined. Pour into baking paper lined loaf tin. Bake 160*C 45-60 mins

I got busy today...... And baked the Belgium Slice off here and it got the thumbs up from my tribe. I also made donut muffins which taste like the donuts that are deep fried and sprinkled with the cinimon and sugar....VERY SCRUMMY

post #101 has the belgium Slice I am used the belgium biscuits having a bit of spice in so I added 1 tspn mixed spice to mine, it was yum, also I found the easiest way to roll it was to put the mix between 2 pieces of baking paper and roll it, then remove the top piece of paper add the jam and just flip it over!! I then slid the whole thing paper and all onto the tray. Yeeha, no flour all over the bench to clean up.

Coffee slice Yummmy! This is so yummy and easy makes a double batch. 2 pkts super wine biscuits crushed, 11/2c coconut mix together. Melt 250g butter in pot with 1 tin condensed milk add 2T of coffee essence i used Bushells coffee & chicory essence.
Do not boil!! Mix dry lot into pot put into slice tin, set in fridge and ice with coffee essence icing.
Also made a banana cake and choc chip brownie.

I made Spiced Apple Cake 125g butter melted, 1 large apple (1 cup diced), 1 c sugar, 1 egg, 1 1/2 c flour, 1 tsp salt, 1 tsp baking soda, 2 tsp cinnamon, 1 tsp mixed spice.
::Topping:: 1 1/2 Tbsp butter melted, 1/2 c rolled oats, 1/4 c brown sugar, 1 tsp white sugar.
**Melt butter, add apples, sugar, and egg. Beat well and fold in dry ingredients. Line bottom of greased loose bottom cake tin & pour mixture in. Combine topping and sprinkle over cake. Bake @ 180*C 30-40 minutes til centre springs back when pressed lightly.

re 761 the easiest way is to line two dishes the same size with baking paper and press the pastry into each so its even and then once the jam is on one just tip and slot the other sheet on top pastry first

Bake and Bake some more Thank you all for the wonderful recipies, my young son is very allergic to heaps even traces of a lot of things.We bake all our food ourselves,and have a great time doing it,he likes the bowl licking the best.He is proud to offer our baking to visitors.We always have yummy food at home so he dosnt feel left out at all when other people have things he carnt eat.I am always looking for recipies that are egg,peanut and dairy free (even though we can sudstitute for dairy) thanks again

Peanut Crunch ....my favourite Melt 140 grms butter & 2 dspn golden syrup - Add to the following:
1/2 cup sugar, 1/2 cup chopped peanuts, 1 cup coconut, 1 cup flour,1 cup cornflakes, 1 tspn b/powder.
Put in slice tin, mod over 20 minutes.
While warm ice with 2 tabspn butter, 1 dspn golden syrup, 1 1/2 cup icing sugar melted tog.

Canadian Roll - #2 favourite 1 pkt malt biscuits - crushed
1/4 cup each of chopped cherries, chopped ginger & coconut
16 marshallows chopped.
mix above with 1/ tin condensed milk.
Shape into a roll - I normally do this on glad wrap, when its in a log shape smother in extra coconut.
I make about 3 logs, wrap each in glad wrap, and ties the ends together like a wee handle, put in the freezer. Take out about an hour b4 needed then cut into slices.
A posh version of lolly log.

Rolled Oat Biscuits/slice Melt and cool 12gr butter,1 tblsp hot water,1 tblsp golden syrup,1/2 teasp baking soda.
Mix 1 cup flour, 1 cup rolled oats, 1 sm cup sugar,1 cup coconut. Pour cooled mix over.
The tin-A sponge roll tin is a little large. I use an expanding one about 22cm sq. Mod oven 12-15 min.The top will be soft,light brown and prob. rising.......

Rolled oats cont'd Avoid over cooking-I prefer it under rather than over done.
This has been enjoyed by at least 4 generations as an everyday biscuit. I have delayed putting it here till I had an accurate time but I go by the look and keep forgetting to make a note! The dough freezes well.

Individual Chocolate mousse puddings (so rich & yet so easy & quick to make!!!)
250g melted milk chocolate, 3 eggs, 1/4 c flour.
Set oven to 180*C. Put paper muffin liners into 6 muffins holes. Whisk eggs and flour into melted chocolate. Pour into paper liners and bake for 12-14 mins. times will vary from oven to oven... just pull them out when the outside is firm but you can still see that the middle is liquidy. They have a mousse like inside and cake outside. I served them with whipped cream and a mini chocolate fish. YUM!!!

Chocolate Fudge Brownie Muffins My 15 year old daughter makes these.. divine as a pudding with some whipped cream too.. - Preheat oven to 180°C. Spray 1 muffin tray of pans with cooking spray, or grease lightly. Place in microwave bowl: 200gms butter, chopped into pieces. 1 tab cold water. 1 dssp instant coffee powder. Zap till butter is melted. Stir in 2 cups of sugar and cool for a few minutes. Add and mix in 2 tsp vanilla and 2 eggs. Sieve then add 2 cups flour, 2 tabs cocoa, 2 tsp baking powder. Mix in 200gms chocolate chips. Place in muffin pans (it's quite a thick batter). Bake 30-35 minutes - the crust becomes shiny and crisp and inside remains gooey, soft and fudgey.. Cool in the tins on a wire rack.. and enjoy.. They're very chocolatey and very rich.. enjoy.. Cheers.. Julie

Juliewn your muffins on 785 Do you think these would work in a baking paper lined cake tin? After "many last tries" I have given up making muffins-far to much is wasted as they stick to tin and a niece now makes them for me! But, this recipe sounds great as a pudding if it would not be spoilt by using one tin and turning out.

Ginger Coconut Slice Ginger Coconut Slice-so nice
Melt 60gm(2oz) butter & 1 tabsp. G Syrup over low heat.
Sift 1 cup SR flour & 1 1/2 teasp. ground ginger, comb with 1/2 cup sugar, 1/2 cup coconut and 1 lightly beaten egg. Combine well. Well greased or paper lined tin-28X18cm(11X7 inch.)Mod oven 25-30 min. Cool.
Lemon icing. Combine 30 gr. soft butter, 2 teasp lemon juice,1 teasp grated lemon rind, 1 teasp hot water-stir till butter melts.. Add 1 cup icing sugar-beat till smooth.

Two things I'm looking for that I can't see on here though - something with marmalade in it (I've made heaps of marmalade and only have a loaf recipe at home) AND savoury biscuits, snacks etc instead of buying crackers and chippies...

Donut Muffins for donut fans...mmmmmmm these are great, taste just like the donuts covered in cinamon and sugar but arnt creasy and fried. 2 c flour,1/2 t salt,1/2 t nutmeg,1 c sugar, 3/4 c milk,1 and a half t babking powder,3/4 t cinamon,1/3 c oil,1 egg. Mix all the wet ingredients into the dry. Put in greased muffin tins at 180c for 20 mins then while they are warm mix together 1 t cinamon and 1/2 c sugar. Melt a bit of butter in a pudding dish and dip the top of each muffin in the butter and then the cinimon/sugar mix. the tops go all yummy and crunchy.

Carton Hotel Maltesers Cheesecake 1 packet plain or malt biscuts,70 grams butter,3 egg yolks,25 grams castor sugar, 250 grams cream cheese, 160 mls milk, 1 tablespoon gelatine powder, 2 tablespoons cold water, 100 grams white chocolate, 330 mls cream, 200 grams maltesers. Line a 20 cm springform cake tin with greaseproof paper. Melt butter & add to crushed biscuts. Press into prepared tin(chill).Whisk egg yolks & castor sugar until light & fluffy. Beat cream cheese in a seperate bowl until smooth & gradually add to egg mixture beating smooth after each addition.Sprinkle gelatine over cold water & standin hot water until dissolved, heat milk until hot(not boiling), add gelatine & pour into egg mixture.Add melted chocolate & fold into lightly whipped cream & 100 grams crushed meltesers.Pour into cake tin & place in fridge to set. Decorate with remaining maltesera & chocolate curls.

Cheats LCM bars I got sick of paying so much for those LCM bars that kids like to sort of invented my own..lol In a bowl put 3dessertspoons gelatine and 1 c boiling water and 1 c sugar and a dash vanilla. Beat untill thick like marshmellow and throw in enough ricies to make like LCM bars. Sorry cant give exact amounts of ricies. Press into sponge roll tin and sprinkle choc chips on top. My kids (3) said they tasted just as good as the bought ones.

Apricot slice needed! We went to a plunket stall yesterday at the teddybear show but the woman would not share her delicious recipe! It had a biscuit type base which the main ingredients appeared to be rolled oats and coconut, then a layer of dried apricots and then a chewy topping which also had coconut. I have been watching this thread for ages so I am sure someone else will know! The other woman at the stand who I knew, was so surprised she was so protective of it but I said to her not to worry - I will know someone will have it! LOL
