christmas cake Hi there I have a packet of Fruit Mix and only a couple of eggs. Has anyone got an easy Christmas cake recipe that I could make. Have plenty of flour etc and fruit mix.

Just about to make a batch of fudge... And wanted to add Cointreau to the recipe (as was suggested in the book). I've read a few recipes on line that have said any liquid added to a fudge recipe have almost "set" the fudge on the spot before they've had a chance to pour it out, and that the texture has become very, very grainy. Does anyone think that by adding the Cointreau at the "add condensed milk stage" would maybe not make it grainy? My own fault for starting this so late in the piece, and don't want to waste good ingredients also. The recipe I've found makes no mention of the fudge going grainy with the addition of liquid, nor a good time to add it if your going to...HELP! Just about to have a minor attack...Thanks for your help, *Angie x

I made a great Berry Jelly for Christmas to have with Pavlova, etc.. I filled a lovely glass bowl with a mix of raspberries, blueberries, blackberries and boysenberries.. then made a raspberry and a boysenberry packet jelly as per the pack.. mixed them together then left it to cool. I poured the cooled mix over the berries, covered it and left it to set overnight. Some of the berries were showing above the jelly slightly - which looked great.. The sweetness of the jelly was lessened by the tartness of some of the berries.. and this made a tasty jelly with lots of fruit, that looked great with pavlova, etc.. I'll definitely make it again.. Hope you all had a great Christmas.. :-)

hi everyone! every blessing for the new year and praying that your christmas was a good one. had to share!! - we tried a combination of nigella and jamie's turkey recipes this christmas and man oh man what a taste sensation!! the best turkey i have ever cooked in over 20 years, moist and juicy and cooked right through no prob, brown and tender - so doing it again this year!! blessings all for the day!

Timetable Did you soak your turkey in brine, like Nigella. You leave it in a cool place for up to three days. Not sure if I am brave enough to give it a try!

yep did it the nigella way with great flavour and lovely colour. very moist. lucky that we have a cool laundry downstairs and had it in a tub with a secure lid and soaked it for 2 days. would not have done it if we did not have a cool place to leave the tub. give it a go if you can - its worth every bit of extra effort! blessings

agreed Christmas club has been going for a month now. I have 2 birthday presents to buy and they will be finished and packed away until needed through the year. Then its on to Christmas presents,because as we all know it falls on the same date of the same month every year

hi all hows the christmas planning going? already finished the gifts for mr 9, just about completed the two teenagers, just vouchers and linen to go, then england to finish and the last of the vouchers for the rest of the crew so at this rate should be finished by end of july - man that is even quick for us, but lots of great sales around. been looking over the cookbooks already to see what i can buy and store now for baking - to sart in sep and frezze. blessings for the week!
