Hi all, just new to being gluten-free. I have had blood test results that point to coeliac (as well as having family members that are coeliac). Before doing the biopsy to confirm, my doctor has said to do two months gluten-free, and re-do blood tests. After just one week I am feeling so much better :) There are a lot of great recipes here that I will be trying out, a big thanks to those who have posted recipes.

Does anyone have a gluten-free pizza dough that can be done in the breadmaker? I have written down the dough from earlier in the thread with baking powder, but would love a recipe for in the breadmaker.

Jovanb not sure about your doctor's advice - you are not supposed to go gluten free until AFTER the biopsy to check if you have coeliacs first. This is more accurate advice from a gluten specialist doctor. Going gluten free before the biopsy could skew the results.

Hi Jovanb, I just made yummy pizza tonite with the Freefrom Gluten & Yeast free Packets of Pizza Dough Mix at Countdown. Just mix with egg & water & load your fillings on top. Easy as. No kneading or breadmaker reqd.

Yes very true,I have coeliac and stayed on gluten,.my tests came back positive,they also found it in my blood tset before I had my biopsy,but had to do the test to make sure and see how bad it was.

Hi, the doctor wants to see how I go gluten free for a while, because it will take months to get into hospital for a biopsy, so why suffer for months. I know I need to have gluten in my diet for the biopsy, so will go back onto gluten weeks before biopsy, once I know the date. I have already improved heaps being gluten free for a week, so not looking forward to having gluten again. Might be TMI, but my main problem was diarrhoea, up to 8 times a day, so I was mostly staying home as I hated going out. Just one week has gotten rid of that :) Also the stomach cramps have gone too, which were keeping me awake at night.

That's good Jovanb - at least you know now that you have improvement on a gluten free diet. I so get the not wanting to suffer for months until the biopsy. I was in your position and I went on a low gluten diet instead of totally cutting it out. I guess going back on a gluten diet for two weeks before the biopsy shouldn't skew the results if you have coeliacs and gut damage from years on a gluten free diet. Funny thing is with me I have symptoms from tiny amounts of gluten and diarrhoea (sp?) and had high blood test results but no evidence of coeliacs. Dr said though I can still develop it though.

you have the same problems as me,I find also anything with fats goes right thru me,have lost 34kgs.

I am also new to a Gluten free diet. I find breakfast the hardest meal as I used to love bread and toast. I dont really like the G.F breads so I have fruit and cereal. I got the GF pizza base (ready made) from Pak n save and they were really nice. I would like to make a christmas cake but unsure what flour to use.

Shelley39 - Use any gluten free flour. The supermarket stock both plain flour and self raising flours in their gluten free section

Beautiful Gluten Free Christmas Cake
850g dried mixed fruit
1 cup brandy
150g butter, softened
1 cup brown sugar
3 eggs, at room temperature
1 cup gluten-free plain flour
1/4 cup gluten-free self-raising flour
2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1/2 teaspoon ground cloves
3/4 cup blanched almonds
1/4 cup apricot jam
Method
Place dried fruit and 2/3 cup brandy in a large airtight container. Mix well. Cover and stand overnight or preferably for 1 week, stirring occasionally.
Preheat oven to 150°C. Lightly grease a 7cm deep, 20cm (base) round cake pan. Line base and side with double layers brown paper and baking paper (see note). Using electric beaters, cream butter and sugar in a large bowl until pale and creamy. Add eggs, 1 at a time, beating well after each addition.
Sift flours and spices over butter mixture. Add fruit mixture and stir until well combined. Press mixture into pan. Smooth surface. Decorate top with almonds.
Bake cake for 2 to 2 1/4 hours or until a skewer inserted into the centre comes out clean. Pour remaining 1/3 cup brandy over hot cake. Allow to cool completely in pan.
Place jam in a heatproof, microwave-safe bowl. Microwave on HIGH (100%) for 30 seconds or until warm. Remove cake from pan and brush top with warm jam. Allow to set. Serve.

Serves two so adjust quantities

6 oz gluten free pasta of your choice
1 small onion
2 cloves of garlic
4 rashers of gluten free bacon
2 eggs
4 tbsp natural yoghurt
6 tbsp grated cheese (parmesan or cheddar)
2 tbsp olive oil
salt and freshly ground black pepper

Heat the oil in a large saucepan whilst chopping the onion and garlic very finely. Sweat gently in the oil until softened.
Chop the bacon and add to the pan, continue to cook for another 10 minutes.
Meanwhile, bring a pan of water to the boil and pour in the pasta. Cook for the appropriate length of time as stated on the packet, making sure the pasta still has a bit of bite (al dente).
Break the egg into a bowl, whisk then add the yoghurt and grated cheese. Mix together thoroughly.

Just came across this thread from going through pages and pages of recipe threads looking for gluten free recipes, newly diagnosed and found some good recipes so thought this would be useful to others who are newly diagnosed.

Shame about the bickering from some and the need to be right kinda ruins it all however thank you to the kind people who have shared their recipes :)

Thought I would bump this up & offer a recipe I stole from somehwere. It is Yummy & all my family & friends who are not GF LOVE it also.

Lets keep this thread to GF Recipes & keep it nice people!

Orange Cake ( gluten free)
410 gms Eggs ( About 7 x Size 7 eggs)
310 gms Castor sugar
310 gms Ground Almonds
15 gms GF Baking Powder( approx 1 heaped teaspoon)
600gms Oranges ( 4 large oranges)

Chop the tops & bottoms off the oranges, place in a saucepan & gently boil uncovered for 1 ½ hours. Keep topping up water as required. Drain off the excess fluid & use a blender stick( or food processor)& whizz to make a orange slush. Place in a bowl in fridge to cool.
Once cooled:
Turn oven on to 180 C.
To make the Cake batter:
Put ground almonds in a bowl & mix the B.Powder through the almonds well with a fork.
Mix the eggs & sugar together in another bowl. Do not aerate the mix too much.
Add the orange slush & ground almonds mix to the eggs/ sugar mix.
Mix gently together to evenly combine. The batter will appear very wet. This is fine.
Pour the mix into a greased / lined tin. Approx 9 to 10 inch round tin.
Bake for about 80 – 90 mins until a tester comes out clean.
Leave the cake in the tin for about 20 mins before removing from the tin.
When completely cool :
Glaze if desired with a Apricot glaze.
A couple of tablespoons of Apricot Jam in a small pot with juice of 1 lemon.
Heat up to make runny. Brush onto cake. Can sprinkle with toasted flaked almonds if desired.
Serve with whipped Cream

we are having friends for tea and one of them is gluten free . wht dish can i make that everyone will enjoy. He wont want special treatment and I dont really want to go out and buy all gf flour etc.

Just keep it simple with few additives. Any meat on BBQ( Steak, chicken, chops, prawns( Not sausages unless GF & not marinated as marinade will have Gluten in it)) & a fresh salad or any Vegies & Potatoes etc.
Dessert can be Pavlova, fresh fruit, cream , yogurt etc.

No I mean tea as in dinner. Something that everyone can enjoy. Probably hot but bearing in mind we all work and that I would only have a couple of hours to prepare and cook. To accompany a salad. (good plain tasty dish - im not out to impress and get 'chef' of the day award)

Hello,I was in hospital recently,and ordered porridge for breakfast,was told I was not allowed them as was not gluten free,I always thought they were,but no.

Grrrr.
I am GF & was using White Pepper tonight & see on the label that it has Wheat Starch in it! Why on earth does Ground White Pepper need Wheat Starch in it!

It is Kings/ Hansells brand. The Pams brand doesn't seem to have any so will buy that from now on.
It is so hard trying to be GF when I keep finding Gluten hidden in all sorts of odd places!

Why not buy whole white peppercorns and keep a separate grinder filled with them.

Pizza base recipe
This is a gluten free recipe I love as it makes a thin crispy crust and now family prefer it too.

1/2 cup ground almonds (add more as necessary for workable dough)
1 egg
1 tsp olive oil
1/4 tsp salt
Italian spices such as oregano and basil to taste

Mix the ingredients above together in a bowl and add more almond flour as needed to form a ball. Oil a pan and add the dough ball pressing down with hands to form the shape of a small pizza crust. Don't worry if it is not as big as the pan.
Preheat oven to 180 with the crust in the pan (this allows the crust to set up and brown a bit)
By the time the oven heats up the crust should be crisp and ready for the toppings which you can add then drizzle with olive oil and bake for 10 mins.

is weight watchers jelly gluten free? i hope so cos i got this recipe the other day, a high protien, low cal snack, and its a dessert

Get a weight watchers jelly, and mix it with half a cup of boiling water, then separately mix ½ cup of water with 2-4 scoops of protein powder (I used chocolate as that’s all I had) and the jelly was raspberry, then mix together and add half a cup of frozen berries and pour half each into dishes to set in the fridge, yummyyyy!! its seriously good!!!

Hi Motorbo,no ww jelly is not gluten free,it is low gf,so has a trace.
Watties are. you also have to be careful with chocolate.
Not sure how bad you are hun,but I would for sure react.
