Quick mix choccie cake I love this recipe...used to make it all the time when I was younger & had a hankering for choccie cake, so baked it again today. It's still my fav basic choccie cake ever & is really moist & quick to make. Best eaten when cold (if you can force yourself to wait). I double the mixture. 90g butter or marg; 2 T cocoa (sifted); 1 C self-raising flour (sifted); 1 C sugar; 1/2 C milk; 2 eggs; 1/2 t vanilla. Melt butter. Add all ingrediants. Beat for 5 minutes (or until smooth). Bake approx 45 mins at 180 deg. (check after 30 mins).

Then, if you want to ice it... Try spreading jam on it first. Then choccie icing (icing sugar, cocoa & water) & top with dessicated coconut. Yum.

traditionally choc cake was "apricotised" or however you'd like to translate it. Meaning it was covered in apricot jam - then came the icing on top! Very lovely!

I prefer it "strawberry-ised" mmmmm...strawberry jam. Goes so well with choccie icing :)

Sweet Milk Doughnuts Sweet Milk Doughnuts
4 ½ cups flour
3 ½ teaspoons baking powder
1 teaspoon salt
¼ teaspoon nutmeg
¼ teaspoon cinnamon
3 eggs
1 teaspoon vanilla
¾ cup sugar
3 tablespoons soft butter
¾ cup milk
Mix together flour, salt, spices, and baking powder and set aside. Beat eggs and sugar together. Add vanilla, butter, milk, and dry ingredients. Make a soft dough and roll to 1/3 inch thick. Cut for doughnut thickness and drip in hot grease/oil (375 degrees). Serve plain or roll in powdered sugar.

Hi scdks ... Just thought that perhaps your topic was worthy of it's own thread? I think you would get a better response but only a suggestion tho. Besides, it's not as though this this thread isn't long enough already - lol! Fave recipe books ... GREAT TOPIC ... Cheers :)

Anyway i just made chocolate chunk cookies by recipe of another trade me member....yummy!!!1
125gm butter, 1/2 cup sugar, 1 egg, 1/2tsp vanilla essence, 100gms dark chocolate roughly chopped, 1 1/2 cup flour, 1/4cup cocoa 1 1/2 tsp baking powder. Melt butter and cool slightly, beat sugar and egg until pale and thick, stir in butter, mix well. stir in vanilla and chocolate. sift flour,cocoa and baking powder, add to mixture. roll large teaspoons lots, folatten with fork, bake 180 c for 15minutes. Variation. take out cocoa and chocolate and increase flour to 2 cups and add 3/4 cup yogurt covered raisins. delish

Homemade Fruit Jubes ?? scdks... My mum make a great fruit jubes recipe. Will get it from her. She has made trays and trays for local fairs and fundraising. So many different flavours. yum. Will post soon

Fruit Jubes FRUIT JUBES: 1 pkt jelly, 2 large cups sugar, 1 cup water, heaped tbsp gelatine. Mix all in large pot, slowly bring to boil to disolve all the gelatine. At boil, add a knob of butter and boil 2 mins. Put into wet tin (run under water and shake water off). Tin size 27cm x 17cm.. Leave 24 hours to set – not in fridge as it sweats. Cold oven works well. Tip out onto baking paper which has been sprinkled with castor suger (1 cup). Sprinkle more castor sugar on top once tipped out. Cut into squares (2cm x 2cm or smaller) rolling each piece as you goin sugar. A little fiddly but works well. Once all cut and sugared leave to dry put into dry plastic container, sprinking sugar between layers. Choose a dry sunny day to make jubes, as a wet moist day affects the quality of product. They keep about a month - flavour expands and the sugar drys out and goes a bit crunchy on the outside, juby on the inside. Yum

fruit jubes Sprinkle sugar over top of jelly in tray before tipping out makes it much easier. Still sugar the paper as well. Sticky work but fun.

Mars Bar Cheesecake 3 tsp Gelatine, 1/2 cup water, 250g cream cheese, 3/4 cup castor sugar, 300ml thickened cream (beaten), 2 Mars Bars, 250g Chocolate Biscuits (I use choc thins), 125g Butter. BASE: Crumble biscuits, mix in melted butter. Press into dish. Refrigerate. Chop up Mars Bars & scatter on biscuit base. TOP: Sprinkle gelatine over water, microwave until dissolved. Cool & set aside. Beat cream cheese & sugar in a bowl add gelatine mixture. Add cream. Pour cream mixture on biscuit base. Top with crated chocolate. YUM YUM. I made six last christmas.

Caramel Drops....Yummy! Filling:20g butter, 3 tsp golden syrup, 2 tsp brown sugar and 1/4 cup condensed milk. Heat ingredients using a low heat until mixture thickens. Remove from heat. Base:125g butter, 1/4 cup caster sugar,1 cup flour and 2 tblsp corn flour. Cream butter and sugar, stir in flour and cornflour. Knead lightly until smooth. Roll heaped teaspoons into balls then slightly flatten. Make an indent in each biscuit and fill with caramel. Bake 180c for about 15 mins. Enjoy.

#729, yes I have th emars bar cheesecake recipe too. It is to die for but because it is such a big recipe I have to wait until I have more than 4 people to make dessert for.

I thought I was the only one with that made Mars Bar Cheesecake, Every time I do it i have to give the recipe to who ever tastes it. Last time I made it I used Moro Choccettes cut in half. It made a nice change. Yummy...love this thread and I too have copied out heaps of recipes! Thanks everyone

Old Fashioned Gingerbread Loaf Have just made this and it's so scrummy. Easy to make and the texture is so light. 50gr butter, 1 Tbsp golden syrup, 1 egg, 1/2 cup brown sugar, 1C plain flour, 1tsp b/powder, 2tsp ginger, 1tsp mixed spice, 1tsp b/soda, 3/4C milk. In a med saucepan, gently MELT the butter and golden syrup together. Add egg, and sugar - mix well. Sift and mix in all other ingredients EXCEPT the baking soda. Mix the soda with the milk then stir it into the mix. (Mixture will be runny) Pour into a baking paper lined loaf tin and cook at 180 - 190 deg for about 35 mins or ready when tested with skewer etc.

Anya2 - recipe for Chocolate caramel slice Hope this is the one you are looking for.

125g butter, 125g sugar, 1 egg, choc icing, 1tspn BP, 1 tbspn cocoa, 225g flour, Cream butter and sugar, add egg, beat well. Mix in dry ingreds, press into tin. Bake 20 min. Meanwhile bring to boil 1/2 tin condensed milk, 2tbspns butter and 2 tbspn golden syrup. Boil 3 mins, stirring. Spread over slice and put back into oven 20 mins, ice when cold.

Another nice caramel Slice Lots of calories but this is a nice caramel slice...BASE: 2 & 1/2 cups SR flour, 2 C coconut, 1 C caster sugar. 250g melted butter. CARAMEL: 397gr can sweetened condensed milk, 60gr butter, 2 Tbsp golden syrup. ICING:
400gr dark chocolate, 100gr butter (Or icing of your choice) METHOD: Base...Place all dry ingredients in a bowl, add melted butter and give it a good mix. Press firmly into a 20x30 sponge roll tin.
Bake at 180 deg C for approx 12 mins or until lightly browned. Place all caramel ingredients in a pan. Bring to the boil then reduce to a simmer. Stir while simmering for approx 4 mins. Spread over base. Place bake in oven for further 10 mins. Cool. For the icing, melt chocolate and butter and spread over caramel. Leave to set.

And line the tin with baking paper ... makes removing it from the tin SO simple. Have the paper come up the sides as caramel baked onto the tin is really ikky to remove!
