Delicious Chocolate Slice... 250gm butter melted & cooled, 1c brown sugar, 2c plain flour, 1 tsp baking powder, 1 tsp vanilla, 2T cocoa, 1c coconut, 1 egg lightly beaten. Sift flour, coca & baking powder into a bowl. Add all other ingredients & mix well. Press mix into a lined slice tin. Bake @ 180°C for 20mins. Allow to cool and ice with a rich chocolate icing. This slice has a delicious soft texture and cuts really well.

Easy Coconut Biscuits... 1 heaped cup self raising flour, 1 cup coconut, 1 cup sugar, 1 egg, 125gm melted butter. Mix ingredients together and beat with electric beaters for 5 mins. Place spoonfuls on a lined tray. Bake @ 180°C for 12 mins.

Slice of Heaven
Sugar-free, dairy-free, gluten-free, guilt-free and delicious
Boil together in a saucepan for 10 minutes:
• 1 cup raisins
• 1 1/2 cups dates
• 2 cups water
In a large bowl:
• 3 cups grated carrots/apples
• 1 cup sunflower seeds
• 1 cup walnuts
• 1/2 cup pumpkin seeds
• 1/2 cups sesame seeds
• 1/2 cup coconut
• 1 1/2 cups rice flour
• 1 tsp cinnamon
• 1 tsp baking soda
• 1 tsp vanilla essence
• Pinch of salt
• boiled raisins and dates
Combine and press into a greased tin and sprinkle with poppy seeds. Bake at 150 degrees Celsius for approximately 30 minutes

Rice bubble biscuits... 125gm butter, 1/2c caster sugar, 1 egg lightly beaten, 1c self raising flour, 1/3c coconut, 1 1/2c rice bubbles. Cream together butter & sugar. Add egg & mix well. Fold in flour and coconut. Roll heaped teaspoons of mix into balls, toss in rice bubbles. Place on baking sheet & flatten slightly. Bake @ 180°C for 12-15min until lighly browned.

hi jenna68 the slice of heaven is softer than a muesli bar.You may find rice flour where the gluten free products are. If you do not want to buy the rice flour, I can see why you can not use ordinary plain flour , it may just make it a bit firmer. The use of rice flour is so it can be eaten by some one who wants it to be gluten free, Pam

Chocolate Caramel Squares... 225gm butter, 150gm sugar, 225gm plain flour, 1tsp baking powder, 1T cocoa, 1 can condensed milk, 2T golden syrup, 50gm butter. Cream butter & sugar. Mix in flour, bkg powder & cocoa. Press 2/3 mix into a lined slice tin. Make caramel by heating the condensed milk, golden syrup & butter in saucepan. Cool & spread over the mix in tin. Crumble over the remaining base mix and bake for 45 mins @ 170°C. Cut into squares.

Continental Slice... 60gm butter, 2T custard powder, 2c icing sugar, 2T hot water. Melt butter, sugar & cocoa together over low heat. Add beaten egg then sugar, biscuits & coconut. Press into a lined slice tin & pop in freezer whilst making filling. Cream filling ingredients together and spread over base. Return to freezer whilst making a standard chocolate icing. Ice with chocolate icing, leave to set in fridge and slice into small pieces. Store in fridge.

This is so yummy and you cant even taste the zucchini. Base:
100g chilled butter
1/2 cup sugar
1 cup standard (plain) flour
Filling:
2 large or 3 small eggs
1 tsp vanilla essence
1 1/2 cups brown sugar
1 cup desiccated coconut
1/4 cup standard (plain) flour
2 Tbsp cocoa
1/2 cup dark chocolate melts or 90g chopped dark chocolate
1 tsp baking powder
1/4 tsp salt
1 1/2 cups grated, squeezed zucchini, I just hand squeezed it.

Method *Heat oven to 160C (150C fanbake), with the rack just below the middle. Line base and sides of an 18 x 28cm pan with baking paper, folding it at the corners so the topping mixture cannot run underneath during cooking.*For base, put cold cubed butter in a food processor (or grate it into a large bowl) with the sugar and flour. Process in bursts, or rub in butter by hand, forming small, even crumbs.*Tip the crumbly mixture into the prepared pan and press down firmly and evenly. Bake for 10 minutes.*For filling, mix the first three ingredients well in the unwashed food processor or a bowl. Mix everything else (except zucchini) in another bowl.Grate, squeeze, then measure the unpeeled zucchini.*Toss with the other ingredients, then add to the egg mixture.*Process briefly, or stir together, then pour over partly baked base

Hi RKCroft Just wondering if there are some amounts missing from the ingredients in your continental slice, there are no mearsurements for the sugar, biscuits and coconut. I assume that the butter, custard powder, icing sugar and hot water are the ingredients for the filling. Many thanks

hawthorn11....yip you're right. The first part's missing. Here is is posted again: Base: 125gm butter, 3T cocoa, 1tsp vanilla, 2c crushed plain or malt biscuits (1 250gm pkt), 1/4c caster sugar, 1 egg beaten, 1c coconut. Filling: 60gm butter, 2T custard powder, 2c icing sugar, 2T hot water. Melt butter, sugar & cocoa together over low heat. Add beaten egg then sugar, biscuits & coconut. Press into a lined slice tin & pop in freezer whilst making filling. Cream filling ingredients together and spread over base. Return to freezer whilst making a standard chocolate icing. OAT BISCUITS (Edmonds Illustrated cook book 1998) Delicately flavored with honey and cinnamon, I throw in half a cup of raisens too. INGREDIANTS: 125 g butter
1/2 C sugar
2 T honey
1 C flour
1 level t baking powder
1/2 t cinnamon
1 & 1/2 C rolled oats
1/2 C raisens or currents optional. METHOD:Cream butter sugar and honey till pale. Sift flour, baking powder and cinnamon

together. Add all drys to the mix and mix well. Roll Tablespoons of mixture into

balls. Place on a oven tray. Flatten with a floured fork to around 5 ml thick, a

bake at 180*C (160*c fanbake) for ten mins or until golden. Makes 30 small

ones. (I'm not one for fussing with rolling balls of biscuit if I dont have to, I roll

the mix into a log and chill for an hour then slice off 5ml thick slices to make the

biscuits. I find I get even thickness biccies and more biscuits for my mix that

way too.)
