Ive just done the weeks baking, what did you bake

Not a very interesting recipe or hard to do, but my family and friends like it: Mars Bar Slice. Ingrediants: 4 mars bars, 125g butter, 4 cups rice bubbles. Melt mars bars and butter, stir into rice bubbles and then place in a greased tray and leave to set. I sometimes put little marshmellows in. This is rich and not good for those of you who have holes in your teeth :)

I made Rocky road yesterday man it was yummmy! heres the recipe and its sooo easy.
Grease tin well. Melt chocolate and spread layer on bottom of tin. Add Mini marshmallows, and gummi bears,and then add melted chocolate on the top and put in the fridge. So easy. I used Nestle Chocolate melts. If your pan is large, then you will need 2 bags of this. You can add nuts etc, I didnt as my daughter is allergic to nuts.

Lemon Sour Cream Cake INGREDIENTS 125g softened butter,2tsp grated lemon rind, 1C sugar, 3 eggs, 1C flour, 1tsp baking powder, half cup sour cream, icing sugar. METHOD Preheat oven to 160`C. Grease and line a 20cm cake tin. Beat butter, lemon rind, sugar and eggs together until light and fluffy. Sift flour and baking powder together. Fold sifted ingredients into egg mixture alternately with the sour cream, mixing until smooth. Pour into cake tin. Bake 45 mins, or until centre springs back when lightly touched. Stand in tin 5-10 mins before turning out onto a cooling rack. When cold dust with icing sugar.

and Date and Oat Slice Base and Topping
220g butter, softened
1 C. brown sugar
1 C. wholemeal flour
1/2 C. white flour
1/2 tsp. baking soda
11/2 C. rolled oats

Filling
2 C. dates, pitted and chopped
1/2 C. orange juice
11/2 tsp. ground cinnamon

Preheat oven to 180„aC (350F). Grease a sponge roll tin.

Base and Topping
Cream butter and sugar until very pale.

Mix in the flours, baking soda, and rolled oats.

Firmly press half the mixture into the sponge roll tin. Reserve other half.

Filling
Put the dates, orange juice and cinnamon into a heavy-bottomed saucepan.

Stir over a low heat until the dates soften to a smooth pulp. You may need to add a little water to them.

Spread filling over base.

Crumble the reserved oat mixture over the dates and press down lightly. Try to cover the dates evenly.

Bake for 30 minutes. Allow to cool, then cut into bars with a sharp knife.

Ma Higgins-the first time this recipe appeared the flour was listed as Self Raising flour. When I made them they spread an awful lot and I wondered if I didn't have enough flour ...... do you know whether it should be SR flour or plain flour?

hi nickyd... its deffinately plain flour! i also copied this recipe off this thread awhile ago and have made them so much,the batter should be quite tacky,but not able to run off a spoon,or spread straight out as soon as put on tray,they will come out huge and flattess anyway,i skip the part about leaving for 10 mins before baking and have never had a prob...I re posted this recipe on the previous page if you want double check?It says to add b.soda,normally you wouldn't add the raisng agent if using self raising...hope that helps?

Hooch444 I will give them another go then - the original recipe I printed off trade Me definitely has SR flour listed-but I did wonder -adding baking soda as well.....Can't find it on this thread now-perhaps it was on another thread? Must say they weren't the most stunning thing I've ever made-but perhaps the plain flour will make all the difference. Family still ate them all tho!

Spiced Feijoa Cake 125g butter melted, 1 cup chopped feijoas, 1 cup sugar, 1 egg, 1 1/2 cups flour, 1 tsp salt, 1 tsp baking soda, 2 tsp cinnamon
1 tsp mixed spice .... Topping: 1 1/2 Tbsp butter melted, 1/2 c rolled oats, 1/4 c brown sugar, 1 tsp white sugar ...... METHOD: Melt butter, remove from heat, and add feijoas, sugar and egg. Beat well and fold in dry ingredients. Line bottom of greased loose bottom cake tin. Pour mixture into tin. Combine topping and sprinkle over cake. Bake at 180*C 30-40 minutes til centre springs back when pressed lightly.

Wholemeal Cinnamon Pinwheels Sift 1/2 cup white flour,2 teaspoons baking powder,1/4 teaspoon salt, add 1/2 cup wholemeal flour, cut in 1 tablespoon butter, mix to a soft dough with 1/3 cup milk, roll dough to a regtangle, spread with 2 tablespoons brown sugar, 1/2 teaspoon cinnamon, 1 tablespoon melted butter, rool up and cut into 8 circles ,place cutside down on tray , bake @210oC for 10 mins

German Chocolate cake.....................yummm-
mm this is a family fav & makes a good sz cake & besides choc mud cake would have to be one of the best moist choc cake ever, has a really nice frosting type icing that goes on top/or you can use normal icing, this is a great cake to make for a special ocasion
DRY MIX
2c sr flour/ 2 c sugar/3/4 c cocoa/mix together
WET MIX
1 c milk/1 c lukewarm water/125g melted butter/1/2 ts b soda/2 eggs
1 Ds vinegar/ mix together
mix the wet mix into the dry mix until combined
pour into lined & greased baking tin/180 for about 40-50 mins
ICING
1 c sugar/3 egg yolks
1 can evaporated milk/125g butter
packet coconut
combine all ingredients in pot
heat on a low heat until thick

Banana Loaf ... this is the one I make: 125gr butter, 1 tsp vanilla essence, 3/4C caster sugar, 2 eggs, 1C mashed bananas, 3/4C SR flour, 3/4C plain flour, 1/2 tsp baking soda, 1/2C chopped walnuts METHOD: Cream butter, vanilla and suger until light and fluffy. Add eggs one at a time, stir till combined after each addition. Stir in half of the mashed bananas, half the sifted dry ingredients and half the walnuts until just combined then mix in the remaining banana, dry ingredients and walnuts. Place in a greased and lined loaf tin. Bake at 180C for approx 40 mins or ready when tested with a skewer. I sometimes add in a handful of coconut too ... Happy Baking!

yesterday I baked ... two lots of chocolate chip cookies. Both different recipes, as I'm always searching for the 'one' great choc chippie to end my search!!!!! I've tried loads of recipes and still haven't found it!

Heres one for the kids to make Chocolate Eggs - 1 pkt plain biscuits, 1 can condensed milk, 1 cup coconut, 2 Tablespoons cocoa. Crush biscuits into crumbs. Add rest of ingredients together. Mix and mould into egg shapes and roll in coconut. Place in refrigerator for half an hour.

I use this one often - 115g butter, 2 tab cond milk, 1 tsp BP, 50g/2oz sugar, 170g/6oz flour. Choc chips or broken choc chunks ! Cream butter/sugar, add cond milk then dry ingredients and lastly chocolate. Bake 180C 10-15mins.

this one is great for something different and everyone loves them ! (even hubby who doesnt like p/butter)
Peanut Butter Choc Chip cookies. 3 tab p/butter, 1 cup castor sugar, 1 1/2 c flour, 1 tab milk, 1/2 tsp van ess, 60g butter, 1 egg, 1 tsp BO, 1/2 tsp B/Soda, choc chips. Cream butterm p/butter and sugar. Cool a little and add beaten egg. Add flour, BP and mix well. Mix together milk, B/soda and van ess - add to mix. Add choc chips. Roll into balls and press on baking sheet. Bake 180C for 20 mins.

Banana Loaf Hi everyone, I have just found this thread and think its great - will def try some of the recipes but would also like to share my own:

BANANA LOAF
2cups flour, 1 tsp baking soda, 1/2 tsp salt, 1/2 tsp cinnamon, 1/4 tsp cinnamon, 1/4 tsp cloves, 1/2 cup unsalted butter, 1 cup sugar, 2 eggs, 1 cup mashed banana, 1/4 cup orange juice, 1 cup chopped walnuts, 1 tsp vanilla. Sift flour with baking soda, salt & spices. Cream butter & gradually add sugar, beating until the mixture is light & fluffy. Beat in eggs one at a time, add sifted dry ingredients alternately with mashed bananas and orange juice, stirring only to blend. Fold in nuts & vanilla. Pour into greased 9x5x3inch loaf pan and bake on 350F for one hour. Let cool 30 minutes in pan before removing ........ ENJOY

Melt and Mix Banana Cake (cos I hate creamin Its a Melt and Mix Banana Cake (cos I hate creaming the butter and the sugar!!!)and it can all be done into the pot! so saves dishes too! Melt 150g butter. Add 3/4 c sugar, 2 eggs and 1 tsp vanilla essence. Mix well. Sift 2c flour, 2tsp bpowder and 1/2 tsp baking soda on top of melted ingredients in the pot. Mix carefully then slowly add 1/2 c milk and 1c (about 2) mashed bananas. Pour into well greased and lined 20cm ring tin and bake at 180 C for 30-40 mins (check after 30 so it doesnt go for too long and dry out) This keeps really well and actually gets moister after a few days - ice with CHOCOLATE icing is the BEST!

zellas..lemon slice recipe this is yummy!!
Lemon Slice,
Place 2 cups flour, 1/2 cup icing sugar and 150gr butter in a food processor, mix until a ball is formed around the blade (don't use hard butter as it won't form into a ball).
Place into a slice tin and press flat.
Bake at 160C for 20 minutes. In same food processor bowl (not need to wash) 3 eggs, 1/4 cup lemon juice, zest of 2 lemons, 1 and 1/2 cups castor sugar and 1/4 cup self-raising flour, process until well combined.
Once base has cooked for 20 mins take out and pour in filling and place back in oven and cook for a further 15 - 20 minutes or until it feels sets in middle. you could spread some meringue over b4 baking..Delish!

Re: Lemon Slice Finally got a chance to make it and I totally agree with Campmum ... it's high up there on the yummy list! In addition to your instructions I lined the tin with baking paper to come up a bit over two sides, making removal a lot easier and I also added a handful of coconut to the egg mixture too. Very thrilled with the result and will definately be making this slice again. Thanks for recommending it!

Weetbix slice help I have made the recipe off this thread a couple of times and both times it has come out very dry, crumbly. I have tried adding less flour, using a lower oven temp, even sprinkling the press mixture with milk to add mositure. Any other suggestions?

Hi cebas unsure as to what recipe you have, but I would probably use more butter..when you mix it all, use your hands to squeeze mix together..if it forms into a ball, it should make a nice slice..goodluck

I have just made.. cheats Raspberry slice & apple slice..YUMMO!! Made these this morning to feed 24..Buy pre rolled sweet short pastry. I have a sq tin exact size as pastry..baking spray tin, line with pastry sheet, spread with raspberry jam, place another sheet on top. Bake 180*C for 20 mins. when cold Ice with raspberry icing!!

Easy Apple Slice Cream 125gr butter & 1/2 cup sugar. Add 1 egg, 2 cups flour & 1&1/2 tsp baking powder. Mix well. knead into ball. For the sticky lemon slice I keep a little of the base over and sprinkle it on top of the lemon mix before placing back in the oven. It also successfully doubles, this is the only way I make it now, absolutley delish

Old Nanas' Coconut Ice Slice Nice and moist....

Old nana's Raisin Drops Here is yummy moist bicky .
8oz butter,8oz sugar,cream together.8 desertspoon milk. add 1tsp baking soda to milk.4tbls golden syrup.16oz flour,vanilla essense . Mould into bicky size for tray. Bake at 180 ish and take out when you want to.Oh , I fogot,add in some raisins as many as you like. Nana is now 98,and still bakes..

Feijoa Walnut Loaf
1 Cup Sugar
1 Cup water
2 Cup flour
50 g butter
1 tspn baking powder
1 egg
7-8 feijoas
1 Cup walnuts

Boil feijoas and butter and water together for 5 minutes.
Allow to cool.

Beat egg.

Mix flour, sugar, baking powder and walnuts.

Add beaten egg and feijoa mix to dry mixture.

Mix well.

Place mixture into a deep loaf tin or 2 small tins.

Bake for 50 to 60 minutes.
Oven temp 180 C
