Ive just done the weeks baking, what did you bake

Pardon my Eno................. for the last couple of weeks I have been writting down recipes out of this thread...and am yet to contribute...although its a little tough as theres alot thats been covered in here...so thought I would add a couple I use to make when I was young...and that was a few moons ago now! I hope someone out there wants to try it!

OOh'by the way,I made the Choc raspberry slice a couple of hours ago along with Ma Higgins choc cookies and both are a great tribute to the donors of these to this thread...Choc slice is yummy,but the cookies are divine...Thanks heaps!

Chocolate Shortcake Deluxe.... Reminds me of a poormans carmel slice..no offence to the poorman..;-0

1/4 lb butter,11/2 c flour,1/2 c sugar,1 tsp b.p,1 Tbsp golden syrup,1 egg,pinch of salt...
~Cream butter and sugar,add egg then golden syrup,add dry ingreds,mix and then spread in a shallow tin...bake 20 mins in moderate oven...allow to cool then spread the folling on top!1/4 lb butter,40z flour,1 egg,7oz icing sugar,vanilla....Cream butter(melt slightly)add sugar then eggand beat,add flour and mix well,spread over shortcake,refridge to set...spread over with chocolate icing.....I think they call the filling "skyte" don't quote me on it though!

Peppermint balls...a big hit..... 500g icing sugar,1 egg white beaten,1/4 tsp peppermint essence,mix all,then refridgerate 30mins......heat together 250g butter,1/2 c milk,1 c sugar and pour all over 350g rolled oats and 4 tsp cocoa,leave 3/4 of an hour,then roll around balls of peppermint and then roll in coconut...store in the fridge!

Again another poormans version of something,this time the choc truffle....I'm all out for the poorman...may you rock on!

Cheats Cheesecake This was posted a while back and I made it with fresh'n'fruity dreamy lemon yoghurt and I put coconut aroudn the edge. It was so nice adn without the calories of cream cheese......
Crush a packet of wine biscuits.
Add melted butter (about 5 Tbsp) enough to bind it together. Press into a pie dish. Dissolve 1 tablespoon gelatine in half a cup of hot water allow to cool. Add this to a bowl containing 1kg fruit yoghurt (any flavour) and 1/2 cup of icing sugar, beat till thick. Pour over the biscuit base and chill till set about 30 mins.

Just thought I'd chip in on this wonderful thread and ask if anyone has a good recipe for coconut macaroons? I've tried several recipes but they are all so sweet (probably just me because I always cut down the sugar in recipes!) and turn out flat and chewy!! Anyway if anyone has a tried and true recipe they would like to share I'd love to hear it! Thanks.

No worries i am just as pleased as everyone else that this thread has been a big success as baking is not a chore for me it is something i love to do, I love to eat it as well which is why i am at the gym 4 days a week and not baking at the moment as i have got huge and need to lose wieght so baking has gone out the door here for a while

Crockpot Bread Pudding 4 egg yolks,
2 cups of light cream or milk,
1/4 cup sugar,
1/2 teasp vanilla essense,
pinch of salt,
5 cups cubed stale french bread,
1/4 cup sherry (optional),
1 jar raspberry jam.

Beat the yolks until frothy.
Mix in all remaining ingredients except the jam.
Mix until the bread is soft and has absorbed a lot of liquid.

Spoon in layers into buttered crockpot,
dribble raspberry jam between layers.

Cook for 6 hours. Variations of this theme can be done with fresh overripe peaches, plums or feijoas.

Afghans, darkfur's chocolate mud cake and Naimona bars.Nainoma Bar recipe
Base:
125g/4oz butter
3 tbsp cocoa
1 tsp vanilla
2c crushed Malt biscuits (1pkt)
1/4c sugar
1 egg, beaten
1c coconut
Melt butter, sugar & cocoa together over low heat. Remove from heat. Add beaten egg, then other ingredients. Press into a sponge roll tin. Place in fridge 30 minutes.
Custard Filling :
60g/2oz butter
2 tbsp custard powder
2c Icing Sugar
2 tbsp hot water
Cream all ingredients together & spread over base. Return to fridge.
Topping:
60g/2oz cooking chocolate
1 tbsp butter
Melt chocolate & butter over hot water & spread over filling. Set until firm in fridge before cutting into squares or fingers.

pear crumble for dessert last night when my parents came round for dinner. Pears are yummy at the moment. Made the crumble the normal way, but added brown sugar, cinnimon and ground almonds to compliment the pears.

Alison Holsts Banana Cake This is the best banana cake recipe I have found.
Cream 125g butter, 3/4 c sugar. Add 2 eggs, 2 tsp vanilla. Whisk will fluffy. Add 3 mashed bananas. Dissolve 1/2 tsp baking soda in 1/4 cup milk. Add to mix, then add 2cups flour & 1 tsp baking powder. Bake 30 mins @ 180C.

Lemon fudge slice 250g processed wine biscuits, 1/2 cup or so coconut. low heat in pan until butter melts but not boiling: 1/2 can condensed milk, 125g butter, 1/2 cup brown sugar. Mix into biscuit/coconut and press into a 30x20 tin. Top with lemon icing: 1 tsp grated lemon rind, 1/4 tsp butter, 2 cups icing sugar, and lemon juice to mix into icing texture. Chill til set. YUMMY!

Coffee Fudge Cake Hi guys, this whole "thread" is that the right term?? has been great.Keen to try some out. Here's one I've just been given as a tried and true fav. 6oz butter 8oz sugar 2 beaten eggs 1dsp coffee ess 1 tsp vanilla 1 pkt wine and malt biscuits crushed.Fruit and walnuts optional

this thread is such an inspiration! after reading up on all the yummy recipes late last night..I decided to make some banana choc chip muffins tonight after a hard days work...this thread is soo cool! I must say fiance' was quite surprised when he walked in with freshly made muffins on the bench...got the last batch in the oven now :o)

try this one....its a family sneaky....delis...as Ma Higgins cookies...but a little naughtier.....
`Whittakers Peanut Slab Cookies'
125g butter, softened 1/4 C. peanut butter 1/2 C. brown sugar, firmly packed 1/2 C. castor sugar 1 egg ,11/2 C. flour 1/2 tsp. baking powder, 1/2 tsp. baking soda Cream butter, peanut butter and sugars. Add egg and beat until combined. Sift flour, b.powder and baking soda,and add 1/2 to creamed mix with 4x 40grm peanut slabs(although more is better)mix then add rest of dry ingreds.roll into a log,wrap and refridgerate for 1 hour,then cut into slices like shortbread and bake at 180.c for 12 mins....yummy...and addictive

Also try this....`Jelly Slice'... I Pkt crushed wine biscuits mixed with 250g melted butter..mix..then press into a greased tin.....Filling...4 tsp gelatine disolved 150 mls hot water..add a tin of condensed milk,mix,pour over base,refridge to set...Topping...4 tsp jelly crystals dissolved in hot water(use any amount of jelly you want,the more the tastier)..let cool then carefully pour over the filling...refridgerate til set...

Easy Fruit Loaf 1 Cup cold tea.
1 Cup fruit. (ie sultanas)
1 Cup Brown sugar
1 tsp vanilla
2 Cups SR flour
Soak first 4 ingredients for 5-10mins in pot. Add flour. Mix.
Cook 45 mins 180deg. Very easy, very yummy.

I made Jo Segar's mini pecan pies and Yummy Mummy cake (which I posted earlier here).
BABY PECAN PIES (makes 16)125g butter, 1 cup flour, 1/2 cup icing sugar, 1 cup pecans, 60g butter melted, 1 egg, 1 cup brown sugar, 1 tsp vanilla essence.
Place 125g butter, flour and icing sugar in a food processor and run machine until the pastry clumps together in a ball. Divide into 16 balls and with floured hands press the pastry into the bases and up the sides of non-stick (or well greased) mini muffin tins. Pastry will set quite firm and hard and you bake it cold like this. Divide the pecans between the chilled pastry cases breaking the nuts as required. Mix melted butter, egg, brown sugar and vanilla until smooth and "gluey" spoon or pour carefully over the nuts. Do not over fill each little pie.
Bake in a preheated oven 180°C for 20 - 25 minutes until the pastry is golden brown and the filling puffed and crisp. Cool in the mini muffin tins for a few minutes until they are cool enough to handle. Give each pie a little twist around to loosen th
