Un Baked Christmas Cake 2x 250grm packets Malt Biscuits,1/2cup chopped walnuts,1/4cup sherry,1/4 cup golden syrup,1/2 cup icing sugar,1/2 cup marmalade,125grms butter melted,1/2 tsp grounf cinnamon,3/4 cup mixed peel,1/2 cup choppd cherries,1/2 cup chopped prunes, 1 1/2 cups raisins.Crush biscuits finely, add nuts.In to seperate bowl combine sherry, golden syrup, icing sugar,marmalade butter and cinnamon. Pour over crumbs and mix well. Combine fruits and stir into mixture. Spoon into greased and lined loaf tin and refrigerate for 24 hous. before cutting. Keep refrigerated.

Fruit Salad Cake 175 grms Butter,3 eggs,1c sugar,2c flour,1/2 c crushed pineapple,1 mashed banana, 2 tablespoons passionfruit pulp,1 tablespoon lemon juice,1 tablespoon orange juice. 1 teaspoon baking SODA,1/2 cup milk. Cream butter and sugar, Add beaten eggs then sifted flour,pineapple, banana juices etc, lastly soda dissolved in milk. Bake in 9 " square tin for 50 minutes at 350 (180c). Ice with passionfruit icing.

Rum and Raisin Mini Cakes 1 1/2 cups raisins cut in half, Stir through 3 tablespoons rum and soak overnight or longer. Cover with water and boil for 10 minutes. Reserve liquid and leave to cool. Cream 75 grms butter with 1/2 cup sugar, Add one beaten egg, then 1/2 cup raisin liquid. Next add 1 1/2 cups flour, 1 tsp baking SODA,1 tsp cinnamon,1/2 tsp nutmeg then lastly the raisins. Bake in mini muffin tins at 165 c for 15 minutes. Makes 44 to 48 mini cakes
Great for a Christmas ( or any other) "Coffee Morning"

Mid winter Dinner Ideas Hi Julie - You asked for ideas for Sharon. Some ideas we are doing (usual traditional things).... Mulled wine, Irish cream toddies, Turkey, bread pudding, roast veg, beans. brussel sprouts with caraway and almond, christmas tarts, pav, christmas pud. fruit salad.....Decorated the house with yule tide things like ivy, lights, candles. No presents, Formal dress, fireworks saved up - especially sparklers. Fun! Happy mid winter everyone.

and a happy getting ready for christmas everyone!! with the way food prices are going i have been keeping a good eye out for all the specials running now that will keep well till christmas. hubby going to start checking the decorations in sept, and then put the lights up from oct so that we get them for a decent length of time around the house!! take care all and have a blessed day all!

Jo Seagars Pecan Pies are nice nibbles for Xmas. Mini chocolate muffins dusted with icing sugar look cool. Decorate mallow puffs with runny white icing and top with red and green.

Spicy Fruit Compote and BUMP...... Crockpot for 5 to 6 hours on LOW

3 large granny smith s peeled cored and chopped
200gms dried apricots halved
200gms dried peaches chopped
100gms glace pineapple chopped
1 pkt crystallized ginger chopped
200gms raisins
200gms prunes (orange flavoured ones are nice)
150gms figs chopped
150gms dried pears/mangos chopped
2 cups orange juice
¾ cups raw sugar (or brown)
1/3 cup lemon juice
½ bottle Green Stone Ginger Wine

Add during cooking as fruit soaks it up and you need some syrup at the end.
Keeps for ages in the fridge and good for the morning constitution.

Serve with Vanilla Icecream or Greek Yoghurt.

If anyone would like to save the pages of a thread have a page of the thread on your screen.. at the top left, click on the word 'File' - then 'Save as' - a box will pop up.. type the name of the thread - use the page number too if you want.. ie: "Christmas thread 1" or any other name you want to use, in the 'File name' part, and at the top of the box, click on the little down arrow at the right end of the 'Save in" box. A range of options will come up.. choose where you want to save the thread to - ie.. to your desktop, so you have it readily accessible.

Now click on 'save' at the bottom right of the box, and your computer will take a few moments to save that page of the thread (or any internet page you want to save like this) so you have it readily accessible to read through as and when you want.. Just go to where you've saved it, and click/double click on the name you've used, and it will open for you.. Hope this helps...
