Nice health loaf or Lovely Moist bran fruit loaf Hello to all, does anyone have any good recipes for a nice health loaf or lovely moist bran loaf. Would really like one if you do. TIA But some of these cakes also sound delicious and I am tempted to have a go and them.

Marie's Cake deserves to be here BEST EVER CARROT CAKE-made in kitchen wizz.
Here it is again.I really recommend this.So easy.Ends up like a GATEAU. In WIZZ,chop 3 medium peeled carrots until finely chopped. ADD:2 cups sugar,1 cup oil,2 teaspoons cinnamon,4 eggs.Wizz again till blended.Then add:2 cups plain flour,2 teaspoons baking powder,1 teaspoon baking soda,1 teaspoon salt.(can add any xtra spices to taste eg nutmeg or mixed spice)Wizz all together till blended.Pour into 26cm large cake tin (lined)& bake @ 150 degrees c for approx 1 hour.When cold ,Ice with Cream Cheese Icing-100grms Cream Cheese,50 grms butter,1 teaspoon Vanilla,2 cups Icing Sugar,Lemon or orange juice & rind. Soften butter & cr cheese.then add other ings -mix till smooth and ice cake.IMPRESS YOUR GUESTS.

Chocolate Cake in a Whizz by Lisa2211 YUMMY CHOCOLATE CAKE - made in kitchen whiz
1 2/3c flour,1 1/2tsp baking soda, 1 1/2c sugar, 2/3c cocoa, 1tsp salt, 1 1/2c trim milk, 100g melted butter, 2 eggs, 1tsp vanilla esse...Put all ingredients in whiz and whiz away, pour into tin (it is very liquidy do not fear) bake approx 50 mins @ 180c
ICING/ FILLING
100g melted butter, 250g icing sugar, 1/3c cocoa, milk to mix, 1 tsp vanilla..... add dry ingredients and butter in whiz, pluse to combine, add dash of milk and pluse again, adding tiny amounts of milk till you reach a thickish soft spreadable icing add vanilla.... cut cake in half- spread some filling on lower half and some jam if you wish (i don't) replace top and ice with remaining icing YUMMY Posted by Lisa2211

Butterscotch Centre Cake.... 125gm soft butter, 3/4c caster sugar, 2 eggs, 3/4c plain flour, 1/2c self raising flour, 1/4c milk, 1 tsp vanilla. Filling: 1/2c brown sugar, 2T custard powder, 1/2c milk, 2tsp butter, 1 egg. Make filling first. Combine brown sugar & custard powder in a small saucepan. Gradually stir in milk. Stir over heat until mix boils and thickens, then stir in butter. Cool 5 mins, then whisk in egg. Cake: Combine all ingredients in a large bowl and beat with electric mixer until smooth & light in colour. Spread half of the cake batter into a lined 20cm ring tin. Pour over butterscotch mix and top with remaining cake batter. You may not be able to smooth it very well as the batter is thick, but dot batter over the sauce as best you can. Bake @ 180°C for 30-40mins until cooked. Cool and dust with icing sugar. This is a lovely plain cake.

i need a fudge cake recipe w/out fruit please try this CARROT CAKE really moist it is moist for about 4 days if it lasts that long
1C oil 3eggs 2C flour 2t b/soda,1c coconut 1c chopped nuts or seeds or half&half 2C sugar 2t cinnamon 2t vanilla 2C grated carrot 1 425g tin crussed pineapple Beat eggs & oil then add all ingredients until blended well Bake in ringed tins approx 25-30mins @ 180deg enjoy

White chocolate citrus mud cake.... 2 tsps each of lemon & lime rind finely grated, 3 tsps of finely grated orange rind, 350gm butter, 180gm white chocolate, 2c caster sugar, 2 tsp vanilla, 1 1/2c milk, 3 eggs, 2c plain flour, 3/4c self raising flour. White Choc Ganache: 360gm white choc, 2 tsps each of lemon & lime rind finely grated, 2/3c sour cream. Combine rinds, butter, choc, sugar, vanilla & milk in saucepan over low heat. Stir until smooth. Transfer to large bowl & cool for 10mins. Add eggs, stir. Add flours, stir to combine. Pour batter into a lined deep (at least 6cm) 20cm square pan. Bake @ 160°C for 2 hours until cooked. Allow to cool. Ganache: Melt chocolate rind. Stir in sour cream. Refrigerate 30-40mins until thick enough to spread

Note, the following recipe is repeated... in that thread "what did you bake last week" or something like that.. It is beautiful and keeps for over a week and even tastes better. Truly worth trying and is very highly recommended for something that is extra special or for a special ocassion. Cheers.

Moroccan Honey & Mint Syrup Cake..Part1 of 3 Batter; 160g butter softened, 310g sugar, 1 ½ tsp dried or fresh mint, 6 eggs, 230g coconut & 210g Self raising flour.
Preheat oven 150c. Beat butter, sugar & mint until change of colour. Add small quantities of egg, coconut & flour beating well between each addition to prevent mixture from curdling. Repeat until all is used. Line a lightly greased 22cm spring release cake tin with baking powder. Pour in the batter, bake for 1 –1 ½ hours ( you can make the mint syrup during this time). Check the cake is baked by inserting a skewer in the centre. If it comes out clean, cake is ready. Remove from oven and allow to cool in the tin for 5-10 minutes.

Moroccan Cake continued...2 of 3. Mint Syrup; 200ml water, 180g sugar & 1 ½ c roughly chopped fresh mint. Place all in a saucepan, bring to boil stirring to ensure sugar is dissolved. Remove from heat & allow to cool for 30-45 minutes. Strain through a sieve and discard mint leaves. Use the syrup as directed in the following.
