Thanks campmum I'm going to make it sunday after I have bottled Beetroot and made my Beetroot Relish. Does the Russin slice taste anything like Russian bikies? My hubby's fav. as well as biscuit fudge, Banana cake...the list goes on. I'm sick of making the same old things! so this thread is great.

We need more recipes so will add a few JELLY CAKE
Combine 6oz butter and 1pkt wine biscuits, press into greased tin.ix 2tsp gelatine with 3 tblsp boiling water, add 1 tin condensed milk and juice of 2 lemons, beat well. Pour over base and chill. Dissolve 1 pkt Jelly and 1 tsp gelatine in 1 pint boiling water. Pour on filling and refrigerate.

LOUISE CAKE Cream 100g butter and 1/4c sugar. Beat in 3 egg yoilksand 1tsp vanilla essence.Add 1 1/2c flour , 1 1/2 tsp baking pdr. Press dough into tin. Beat 3 egg whites until stiff add 3/4c sugar slowly. Stir in 1 c coconut. Spread jam over base then meringue mixture. Bake 20 - 25 mins @ 180.

Choc Raspberry Slice I have used this recipe and changed it a bit, instead of using the jam use a can of Nestle Caramel (like the condensed milk). Cook the same just replace caramel with jam, just divine.

Chocolate caramel slice Also keep it in the fridge, much nicer, as it tends to crumble in the heat.

banana cake with cream cheese
icing my kids and huddy dont like
the brought heres one i make
2 cups of flour 1/2 cup cocnut
2 cups of any mixed cereal or
the bits in the bottom of thebox
the kids wont finshed 4or more oz
of butter ( melted) mix will
press into a well greased slab
tin an bake for 10 to 15 mins
when cool top with icing
i make it all the time using
differnt cereals and icing
kids love .

hubby just made some choc chip cookies 6 ounces butter, 1 egg,3 tbsp cornflour,1 cup sugar, 1& 1/2 cup flour,1 tsp baking powder, 1 pkt golden instant pud (or any flavour) chocolate chips to taste. Combine ingredients spoon onto tray and bake 12 mins at 150 deg c or 300deg f...soo yummy....his mums old recipe

gingerbread cake *** ginger bread it's moist and egg free i recommend you try it. it sounds like a lot of golden syrup but it's not a miss print.
150g butter 1 cup low fat milk 1 cup golden syrup 1\2 cup brown sugar 2 teaspoons baking soda 2 1\2 cups flour 2 1\2 teaspoons of ground ginger 2 teaspoons mixed spice.melt butter first then add golden syrup brown sugar and milk and mix together then add everything else grease the cake tin and put in the oven at 180 c for 40 minutes let it cool for 2 hours then cut. Cream chesse icing is nice on it as well.

Afgans I discovered a tasty replacement when making chocolate afgans as I had run out of cocoa! Just add a packet of chocolate instant pudding! They are slightly chewy in the centre and the kids loved them! Rice bubbles can also be used instead of cornflakes. I love this thread - off to do some baking!

I've just finished making marshmallow shortcake, now off to start sweet and sour pork for tea, Out of a can cause its too hot to spend too long in the kitchen, had roast pork last nite but didnt do the vegies cause it was too hot in the oven. Just had pasta and tomatoes with it. Oh made the double choc chip muffins but added mallowbakes to the ingredients as well, my three year old loves em.

Best Banana Cake 125g butter,1 1/2 c sugar,3 eggs, 2 1/2 c S.R flour,3-4 mashed bananas
cream butter and sugar,beat in each egg with a bit of flour (stops curdles)add 1/2 mashed banana and 1/2 flour,then same again till nice and creamy.180`for about 40-55 mins
top with choc icing when cool....yum yum yum...my kids want this everyday in their lunch

I get sick of making the same things every week for my guys. The are really fussy with what they like. I have make chocolate cake so much I make it with out the cook book. I also make chocolate chip (with cocoa and chocolate chips) biscuits, these cool home made mellowpuffs and that's all they really like. They don't like nuts or cereals in the baking. What else can I make. (they don't like fruit in the baking either)

I just made.............. or I should say attempted to make meringue baskets to fill with a surprise and cream for my 4 year olds birthday tomorrow, I halfed the mix and added raspberry essence and red food colour to one lot and banana essence and yellow colour to the other, um dont think I beat the whites long enough and my baskets are slightly flat not all but my son likes em anyway, off to do mini choc eclairs now and choc krackles,

spicy apple cake 2 apples Peeled, cored and chopped, 1cup sugar, 125gms butter Melted, 2 eggs, 1 1/2 cup flour, 1 tsp baking soda, 1 tsp cinnamon, 1/2tsp nutmeg, 1/2 tsp allspice, 1/4tsp salt, 1 cup raisins.
Combine apples and sugar until apples are coated and stand for 2-3 minutes. Stir in butter and eggs. Add sifted dry ingredients. Stir in raisins. Bake 180 C for 50-55 minutes, Leave in tin for 10 minutes before turning out. Nice warm or cold.

Carrot Cake with Pineapple & Nuts Darkfur, this is a realy delicious Carrot Cake which you could perhaps substitute Bannana for the Carrots if you so wished.
CARROT CAKE: 1 cup flour, 3/4c sugar, 1tspn Baking Powder, 3/4 tspn Baking soda, 1/2 tspn Cinnamon, 1/2 tspn salt, 5/8 cup oil (1/2 cup + 1 tbspn), 2 eggs, 1 cup grated carrot, 1/2 14oz can crushed pineapple, drained (2 handfuls squeezed) 1/4 c roughly chopped walnuts.
Put all dry ingrediants into kitchen whiz, mix 5-10 secs. Break eggs into oil - leave whole, gradually feed into dry ingrediants. Mix well - 30 secs. Mixture very thick consistancy. Turn into a bowl, & stir in carrots, pineapple & nuts. Bake in a greased & floured spring form tin for approx 1 hour at 350F, 180-190C.
ICING: 3 OZ Butter, 1/2 tspn vanilla, 3 oz creamed cheese 6 ozs icing sugar.
Butter, creamed cheese & vanilla in whizz, approx 20 secs, Add icing sugar, and mix thoroughly. Chopped nuts can be sprinkled on the cream cheese icing.
This cake is really yummy Enjoy !!!!!

Thanks shelles For that yummy lemon slice recipe. Its not easy to find something that one of my 5 kids wont say yuck to. I made this today and they all wanted more. Will look forward to making it again very soon. Keep those great baking ideas coming!

Jaffa Slice very yummy - even 26 and 30 year old men love it!
200g jaffas
250g cooking chocolate
2 eggs
125g butter
1/2 cuo caster sugar
1 1/4 cups plain flour

Grease a 20 cm square cake tin and line base with baking paper.

Combine butter and chocolate in pan, stir over heat (in a double burner) until melted and smooth, cool slightly.

Stir in sugar and eggs, then sifted flour into chocolate mixture. Fold in jaffas.

Spread mixture evenly into tin. Bake at 180 degrees centigrade for about 35 minutes or until firm to touch.

Stand 15 minutes before turning out of tin. Cut into squares.

Not a dumb question I have trouble working oz's to grams too. My scales have both but I still get it wrong sometimes......Does anyone use Vanilla Sugar? Would like to make some but not sure how to use it.

I also turned off the TV and got my 4yr old to help me bake.(first time Ive let him) We made double chocolate muffins and Banana cake. The only done side is he asking "are they ready yet" every 2 minutes.

well howdy to all you super baking mums, have not been here for a while so thought i'd pop in and say ""HI"", i did the baking yesterday -choc chip cookies,louise cake , date muffins , also had a failure with coffee shortbread, they all dripped off the tray and look sort of like brandy snaps - but edible so guess they will be devoured.Wow this thread has been going for a year !!! And still recipes getting added - fantastic , BIG HI to KOB ((waves)), well best get to work now , happy cooking ladies.

I wouldn't call it baking but.... I made little bacon and egg pies (muffin tin sizes)for the kids lunch boxes. They absolutely love them and makes a nice change for them.

this is how I do it I use flaky puff pastry and line each muffin tin. Chop some bacon pieces and put in. Then beat a couple of eggs with a bit of milk and put on top of the bacon pieces. Put into an oven (I think about 200c) and then watch til I think they are cooked. My boys don't like onion otherwise I'd pop some in. Sometimes put a little grated cheese in as well.
