"Rather Special Shortbread" 250g butter, 125g custard powder, 125g icing sugar, 250g flour

soften butter, cream with icing sugar. add custard powder & mix well. stir in flour. Squeeze into logs. then slice thru. Place on cold baking tray. bake 15-20 mins @180. very nice tastes like yo-yos

I thought I had posted my ham glaze info here.. Here 'tis.. To bake and glaze your ham.. Our favourite recipe - given to me by a butcher here in Whakatane many years ago (my recipe book notes 1984), is: Simmer together till the sugar is dissolved: 2 cups brown sugar, 1 cup pineapple juice (use the juice from a can of pineapple rings, and make the juice up to 1 cup with water), 1/2 tsp dry mustard. I place two layers of tinfoil in the bottom of my roasting dish. Remove the skin of the ham, and score a diamond pattern about 1/4" deep into the surface of the ham. Place the ham on the tinfoil, then decorate the ham with the pineapple circles and with cherries inside the circles. Use toothpicks to hold them in place. Pour over the glaze, cover firmly with foil then the roasting dish lid if it will fit - otherwise just use the foil. Bake at 160°C for 20 minutes per kilo. Baste with the glaze about every 10 minutes.

Once it's cooked, I place the ham on a cake rack over the roasting dish; completely cover the ham with foil so it cools slowly to ensure the ham stays tender. Once cold, refrigerate. This tastes wonderful and I don't use any other glaze.. Hope this is of help.. Enjoy... Julie

bumping again cos christmas baking still to happen and prepe for the big day still underway!! going to make more homemade ice cream and rolled pav tomorrow night. hubby has to have an extra one for boxing day brekkie - oh my that is soooooooo sad now that i read this post!! rolled pav for boxing day brekkie!!! but it has become a tradtion in this christmas addicted house!!!

Easiest Xmas Cake..Really Quick Mum just gave me this recipe & it is in the oven as we speak.Boil together 1c H2O,8oz butter,1kg mixed fruit,1 Tbls vinegar & 2 Tbls mixed spice.Turn off & add a tin of condensed milk,1tsp of each; vanilla,lemon& almond essence,1 tsp baking soda.Cool, when luke warm add 2 c flour,1 tsp baking powder,1 Tbls grated lemon rind & 2 Tbls brandy.Mix well & bake in lined 8" tin 140 deg C approx 2 hours.

moving2: I am wondering if it is the stain glass window cake that you mean - heaps of fruit but very little flour etc. i have hunted high and low but i can't find my book that has the recipe in it!! will bump to the top in the hope that someone will be able to post it for you. God bless!

hi deanna its a fruit and glace' cherry cake that is full of fruit but not a lot of flour and when it is sliced the pieces look like a piece of stained glass. i can't find my recipe anywhere!! but if you check on the net or at the library you should be able to find it. it taste's wonderful and is sooooooo full of fruit! enjoy

Hi Donna... I've just found a thread for you then realised it's your thread. Here's a quick way to find a recipe or thread:
Have the messageboard on your screen - or the Christmas thread open, etc.. On the lower left of your keyboard, hold down the control (Ctrl) key, and at the same time press the letter "F". A box will pop up. Type a word you're looking for - ie "ambrosia" and click next.. and again.. until you find what you're looking for.. or you've found all the threads or posts with that word in. Not on that page? Go to the next one and repeat.. makes it easy to find any thread or posts in a thread that you're looking for.. Cheers..

what about a delia smith one: roll out flakey pastry and then sprinkle thinly - chopped cooked bacon, and grated tasty cheese. roll each side into the middle and then into the middle again. slice in thin pieces and when cooked they open up slightly like little heart shapes. bake as for pastry 180 deg cel. an anti pasta board works well - mussels, pepparonii, stuffed capsicans, olives, pickled onions and gerkins, cheese board, crusteenies and spreads, pate and dips. have a great christmas!!

I just noticed the cake recipe you posted for me last season!!!!! Sorry I didn't respond - missed your post! Have you made it again this year? any additions / changes? Anyone else made it" #379 on Christmas thread. The one I ended up making last year wasn't so big but it was very nice (Dollmakerz)- the recipe was delicious but my print out is water damaged so I'm going to post a request as I can't see it on the TM cooks site.

TWO MORE SLEEPS too go :)Wow this thread has got so big.It is awesome too have so many wonderful recipes too choose from.Wron I did make my cake again this year,I even made a second lot and divided it in two and are giving them away as gifts.I havent made any changes as it is a delicous cake just as it is.I highly Recommend that you give it a go,you wont regret it.The ones I am gifting I glazed while warm with apricot jam and a bit of boiling water,then put sliced almonds and cherries on top then glazed again.YUM!I hope you all have a very enjoyable christmas with your families.Lisa :)

I hope you all had a lovely Christmas 2007.. For suggestions for using leftover ham: ham is really nice to cut into slices that are as thick or thin as you want, then grill, fry or bbq them as you would do bacon - the flavour isn't quite as strong as bacon - tastes very good though. Add ham chunks and lightly cooked veges (onion, asparagus, capsicum's, courgette's, etc) to a sweet and sour sauce and toss through, then serve over rice. Add to scrambled eggs, or omelette's, or quiche, or use in place of bacon in a bacon and egg pies - or muffin sized pielets! How about that for a new name.. pielet's are small pies! hehehe..

Toss bite sized chunks of ham and hot potato or kumara chunks through salad veges for a warm salad - serve tumbled into bowls with a tasty dressing for a well balanced and light summery meal.. Add ham to a frittata, with summer veges. Freeze some in slices to use in quiche, pies, soup, etc.. Add some chopped small cubes of ham to cheese scones for extra flavour. Make a pizza, including ham as part of the topping. Make Calzone bread - with sliced ham as part of the filling that is cooked inside the bread. Make ham, tomato and cheese toasted sandwiches, or filled panini.. and cook in a sandwich maker or electric grill. Include salad ingredients also if you want.
