I stir fry it, melt butter and cook some onions in pan, toss in the chopped washed silver beet and stir fry it til wilted. It tastes lovely, almost takes on a nutty flavour.

Peel and cut quite small some carrots - into pan first.
Then add washed and torn up silverbeet discarding the white stalks - tiny bit of water as there will be water still on the leaves. A few shakes of salt then cook on medium to low heat until carrots and beet are cooked. Drain off as much water as possible , chop up everything with a knife against pan side, pepper and a little butter melted into it. Yum! Almost like baby food!

Take a bunch of silver beet, yes silver beet, wash well and strip the leaves from the stems.
Slice it VERY finely.
take 1 orange and finely grate the rind into the silverbeet,chop orange in half then squeeze the juice of one half on top.Chop the other half into bite size pieces and add to silverbeet as well . Add 1/4 - 1/2 cup of any vinagrette dressing and toss lightly.Our choice is chilli and lime

This is your basic recipe. To this I had chopped tomato, avacado, fetta, any thing you like in the salad line.
I am not a great fan of cooked silverbeet but this is soooo yummy it is now a family favourite.
Will never bother with lettuce again. And it looks so pretty on the plate

Use the silverbeet as pastry just blanch quickly then place in dish, baste with beaten egg We usually have three thickness so baste each layer with egg.
Real yummy and less fattening. Nice for meat pies, bacon and eggs pies and quiches or smaller savouries

Mix cooked Silver Beet with yesterdays left over mashed potato about twice as much potato as SB add an egg salt pepper then form into patties egg wash( a messy business) then breadcrumb fry in butter.

I use it in a cottage pie. Layer of mince etc. layer of cooked silverbeet with stalks chopped in a cheese sause, layer of mashed potato or mashed kumera or mashed carrots/potato together. Yum

Silverbeet Pie
Line a pie dish with pastry (we like flaky) and bake blind.
Cook a potful of sliced silverbeet, stalks and all, so you have about 6 cups of cooked silverbeet at the end. Drain.
Make about 3 cups of white sauce, but at the end, add half a packet of smoked cheese slices and let it melt through. I only say slices because believe it or not, it needs to be that 'processed' kind. I haven't found that in a block for a long time.
Carefully mix the silverbeet with 3 or 4 chopped hardboiled eggs.
Tip this into the pie shell, then pour the sauce over the top. Use a fork to try and get it to run into the filling, but you still want a bit of a layer on top.
Then, add a packet - whatever size is up to you but even a kiddie packet is fine) of PLAIN potato chips, crushed.
Then bake the whole thing until it's heated through. I know it sounds awful, but it has been a family favourite in my house for years - the kids even ask for it on their birthdays?!?! Quantities are up to you obviously but what I've given above serves 4 or 5. I have made huge ones in roasting dishes before too, great for when you have a crowd coming for lunch and don't want to break the bank :)

I steam silver beet then mix through some mint sauce. When our kids were young they hated silverbeet with a vengance lol until I was told to try it this way and ommmg they couldn't get enough of it. I also steam it with a bit of cabbage sometimes (still mix through some mint sauce).

Easy (and not authentic) Spanakopita (Greek spinach and egg pie)

Into a huge bowl put:
several sauteed onions,
1 tub cottage cheese,
2 cups grated cheddar cheese,
2 cups chopped spinach or silverbeet (or more!),
1T nutmeg,
2 crushed garlic cloves,
1T salt,
6 eggs.

Mix all with a spoon.
Line a big dish with 5 layers of filo pastry.
Fill pie.
Top with 4 or 5 layers filo pastry.
Cook one hour on 180C or till set.

Traditional Spanakopita (Greek spinach and egg pie)

1kg fresh spinach or silverbeet leaves,
1/2 cup chopped fresh parsley,
1/2 cup chopped fresh dill,
2 cups finely chopped green onions,
1 1/2 tsp. fine Fine Grey Sea Salt,
1/4 cup Organic Extra-virgin Olive Oil,
3 cups chopped onion,
1/4 tsp. coarse ground black pepper,
250g feta cheese, crumbled, (traditionally made from sheeps milk, feta cheese from goat milk is also good),
14 filo leaves (usually sold frozen, thaw thoroughly!),
3/4 cup butter, melted.

Wash and clean the spinach. Discard the stems. Drain & cut the leaves into shreds.
Combine the spinach, parsley, dill, green onions and grey sea salt in a bowl. Let stand for 15 minutes, then press out all of the liquid.
Heat the extra virgin olive oil in a skillet and saute the 3 cups of chopped onions until soft and transparent.
Add the spinach mixture and saute for a few more minutes.
Add the feta cheese and black pepper.
Place each of 7 filo leaves in a buttered 25cm x 35cm baking pan, brushing each leaf with melted clarified butter.
Add the spinach mixture, spread into a thick layer then add remaining filo leaves, again brushing each leaf with melted butter.
Cut into approx. 7cm squares with a sharp knife.
Bake at 200 degrees C for 30 minutes or until golden brown.

Italian Silverbeet
This is eaten as a side dish like a salad.

Chop and cook silverbeet - put the stems first into the saucepan whilst the greens are chopped, no water should be needed because usually the water clinging to it from washing is enough – “you don't want to end up with too much liquid”. While the silverbeet is cooking make the
Vinaigrette:
good olive oil, vinegar of choice – see note below, salt, pepper
1 spoonful of hot English mustard
plenty of garlic, chopped

Mix well, then either pour over silverbeet in the saucepan, while still hot or invert the silverbeet into a salad bowl. Toss frequently while cooling - I usually keep the lot in the pot, then when all is mixed up nicely and cooled down I put it straight into the serving dish. . Can be stored in the refrigerator for up to a week.
Note: Do not use just balsamico as it’s not sharp enough – I use a mixture of balsamico and cider vinegar – uli.

Lebanese Silverbeet Stalks with Tahini
3 cups silverbeet stalks, trimmed and cut 2 cm pieces
60 ml lemon juice
70 ml tahini
1 clove garlic, crushed
½ tsp salt
parsley to serve
Put stalks in saucepan, cover with cold water, cover and bring to a boil. Cook 10 min or until tender. Drain very well
Beat together the lemon juice, tahini, garlic, salt and 60 ml water. Pour over stalks and toss to coat.
Serve hot or at room temp with parsley leaves.
Good way to use up those silverbeet stalks.. thanks to davidt4... wifey loves it and so nice as a side dish one night after using the leaves sweated down the previous night...

i make silverbeet fritters. you can use spinach also..

. cut up silverbeet including some of the white part .. cook off.. squeeze out the water in the silverbeet,, chop the silverbeet in to small pieces. place in bowl. add diced onion, grated cheese, diced ham, garlic, salt and pepper, eggs, mix well.. if mixture too wet add breadcrumbs, grab a handful and roll in to a ball. slightly flatten,, you can panfry the silverbeet or place in a deep fryer..

any left over veg can go in to the silverbeet mix.. i used to make spinach, silverbeet fritters with mashed potato and left over pumpkin mash added to the mix,, ,,

Blanche lightly and use for dolmades with rice nut mix or mince mix. Layer in baking tray cover with a simmer sauce then bake.

Or juice with other fruits and veggies for zing lift.

Steam on top with boiled spuds, drain add fresh chopped garlic salt pepper and mash together. Use as side dish. It's a main meal for when I feel poorly. the next day a scoop with cheese buttered bread in the panini maker is heaven.

Slice open chicken breast and stuff shredded silverbeet, lemon zest, garlic, pine nuts and butter mix.

I've made sag panneer from scratch using silverbeet.

Silverbeet or chard has an interesting history is related to beetroot but has no relation to spinach yet can be substituted for spinach in some dishes. I love growing the coloured chard an use in landscaping gardens for colour and texture. When left to seed, it adds another demension to the garden. It is part of a eadible garden mix I use to introduce kids to growing their own gardens. Colour and fast growing.

I made some potato cakes the other night and added silverbeet, parsley and chives, and they were lovely. Silverbeet is also nice put into a roasted vegetable salad for the last few minutes of cooking the dish.

just substitute silverbeet for the spinach -
Spinach ~ Feta Filo Rolls
Ingredients:
1 cup chopped uncooked spinach.. 6-8 sundried tomatoes.. 1 red onion finely chopped.. 1 egg.. 200g feta cheese roughly chopped.
Method:
Beat the egg and add all other ingredients and mix well... Brush 3-4 sheets filo with butter..
Add mixture to the filo and roll up..
Cook in moderate oven ( about 160c ) for 30 mins.

"Spinach & Feta Muffins.

We had a beautiful lunch in Dubrovnik of local fish which was served with Silverbeet and potatoes that were delightful. If you google Dalmation Silverbeet and Potatoes you will get a few versions! Well worth trying! Must have it again!

I have the following receipe - it so yummy and full of flavour.

Silverbeet and Feta Frittata
Preparation time:
30 mins
Cooking time:
50 mins

A delicious vegetarian dish ready in only 30 minutes!
Ingredients
1 bunch (400g) silverbeet, stalks removed, leaves roughly chopped 
1 1/2 tbs olive oil
2 onions, diced 
1/2 cup mint leaves 
1 lemon, zested 
120g goat’s feta 
10 eggs, beaten 
Green salad, to serve (optional)

Method
1. Preheat the oven to 180°C. 
2. Cook the silverbeet in a large saucepan of salted boiling water for 3 minutes. Drain well and squeeze out any excess moisture. Transfer to a large bowl to cool. 
3. Heat the olive oil in a frying pan over medium heat, add the onions and cook, stirring often, for 2-3 minutes. Transfer to the bowl with the silverbeet. 
4. Add the mint leaves, lemon zest, feta, eggs and some cracked black pepper to taste and mix until well combined. 
5. Lightly oil a round ovenproof dish, about 25cm in diameter and 5cm deep.
6. Spoon the silverbeet mixture into the dish and bake for 45 minutes, until set. 
7. Serve with a green salad, if desired.

I only ever eat silverbeet the way my Nana made it...boiled to buggery, chopped very finally and made up with a white sauce (although I just add the chopped spinach to flour then stir through a little milk and seasoning - same result without the faffing out with melting butter etc). I can bowls of it just like that.

next time try

saute onions and bacon, add sliced mushrooms , add uncooked sliced silverbeet or boiled to buggery, chopped very finally silverbeet, add cream and reduce, add parmensan cheese, season with salt and pepper,, optional add curry powder,,

this only takes a few minutes to cook , the ingredients portions are up to you. if you do not like for example,,, bacon then leave it out

The way I (and most other Dalmatians) prepare it is by chopping up a few potatoes and putting them in boiling water followed by adding the chopped up stems a few minutes later. Leave to cook until the potatoes are just about done then add the green part of the silverbeet (chopped up). Cook for a few minutes, drain and season with salt. Add olive oil and lightly mash the potato with a fork. We have a green leafy vegetable very similar to kale which we prepare in the same way.

Heat some oil and into it put a cinnamon stick, a few cloves for a few minutes, then some garlic and ginger.
Add some chopped onion, then some chopped tomato, turmeric, chilli powder and salt,
Mix this with some chopped steamed silver beet.

Told many moons ago that during Wartime people chopped up stalks and flavoured them with Celery Seeds/Powder, thickened - separate dish as times were tough with few veges available other than home growns. Have always eaten stalks since along with the leaves.

Creamed Silverbeet

600 grms silverbeet (stems removed) leaves finely chopped

1 cup water
1/2 cup veg stock or use a stock cube

3 tbsp creamed horseradish
1 cup cream
1/2 cup sour cream
Salt & pepper

Cook silverbeet in water and stock till tender
Squeeze out the moisture.

Place in food processor with other ingredients and pulse.
