Trifle

When do you make your trifle, is this afternoon ok will the sponge go too soggy I thought this afternoon but just put glad wrap over the custard and add cream tomorrow? It's been a few years since I have made one, I'm doing two one with jelly on the bottom for children and one no jelly with lots of Sherry for adults.

Well when we do ours the longer it sits in the bowl before it gets devoured the better it gets. Soggy sponge is what it is all about because it soaks up the jelly and fruit juices as it is suppose to. Now just imagine dry sponge in it, yuck.

I make ours on Christmas Eve tp the custard part too.

I do ours in huge wine glasses. And I make 4 ( only two of us here )..

That way you have the "Day After" taste the first time you have it.. We have ours for Christmas night dinner and then again on Boxing day.

Its the only time we ever have them.

Make them today up to the custard level and glad wrap as you are going to and put the cream on tomorrow. Theyre always better the next day.

a bit late I know but I found I also ended up with a very soggy mess - I think though I used too much tinned fruit and so too much juice seeped in. I now use frozen berries and now just a nice moist trifle and no soggy mess. I make my custard using coconut milk - and even when adding the cream it still maintains well for another two or three days in the fridge

The real sponge trifle made with port, needs to be made 3 days before it gets eaten. With custard, jam and cream going on last.

I always make the “ Icecream Pudding Custard” from the Edmonds book as it makes a nice light custard and doesn’t go stiff.
