Where can I get Parisian essence?

#Post

Always used it to darken stews etc. Can't find it on any supermarket shelves now.

Never heard of it, but my first reaction is 'Paris'!
Would marmite or vegemite do the trick?

I tried making it once before and it was a disaster. If I can't buy from somewhere I'll have another go.

What? First time I have heard of such a thing, it's sugar! You put caramelized sugar in stews??!! You want dark, a bit of soy or black bean or lea and perrins or something.

You seem to have missed this, in the recipe for making Parisian essence....

** .... intense heat under which it is cooked destroys all sweetness.**

I guess you don't brown your meat, or onions, for the CARAMELISATION that produces?

I can remember my grandmother making it, first the long caramelisation process, then the extremely slow addition of water, little by little. And it never tasted sweet..... but was very commonly used, especially in country kitchens.

Also, many would not choose to use L & P or soya sauce, due to the saltiness.....

OP - you could try Reduced to Clear, if there's one near you (or online...).
I got my last bottle from there....

Union Jacks on line have some. Same product but different maker. Look under gravy. They deliver. It's about 3.99.

Hansells made Gravy Browning which is the same thing as Parissien Essence but it seems to come and go from the supermarkets. The last time I couldn't find it about 3 years ago I rang Hansells and the very kind lady sent me 3 bottles for $10. I was stoked and still using it today.

I haven't seen this in a long time. Just finished my last bottle and still looking for a replacement.

Hansell's Gravy Browning no longer available in retail packs (phoned them about 2 years ago)
So purchased 2 litres from Gilmours and after the 2 years have about 1.95 litres left, so that should last me till I am at least 100. If you want a refill call in!!!!!!
