Polynesian recipe - help / suggestions please.

I have no idea what it's called (hails from Tonga or Samoa?) - absolutely delicious! It has Taro leaves (if not available though, I think they use Silver Beet or other greens when not in season).

Are you thinking of Palusami? Taro leaves baked with onions, coconut milk and sometimes corned beef.

Yep, that will be it. Silver beet or spinach as a substitute for the taro leaves. Cooked in little in little tinfoil packages (traditionally would have been banana leaf packages). I'll see if I can find an online recipe.

I sometimes make a simple variation by putting layers of steamed taro leaf (or spinach) in a baking dish with onion, thinly sliced kumara, coconut cream and salt and pepper, bake it about 45 minutes or until the kumara is tender.

We add onions, chopped tomatoes, salt and crushed chilli to ours and sometimes corned lamb. Wrap up in foil and bake in the oven but of course it tastes best in a hangi.

I often make it using spinach/silverbeet chopped onion and coconut cream (I use kara as its thicker). I don't add corned beef as I don't like it. Davidt4, I like your idea of adding kumara, will try that with the next batch.
