Suggestion for an icecream

1 | I just found a recipe book missing for many, many years. In it is a favourite I used to make, coffee flavoured crepes with bananas inside (then you bake it briefly in the oven with a brandy sauce). Flippin devine. I used to use an icecream called Butterscotch brittle with it. Any suggestions for something similar? Going to make it for Christmas day. 2 | The caramel semi-freddo might fit the bill. If you want some crunch you could make some honeycomb and add small pieces. Caramel Semi-freddo 4 tab sugar Make caramel with sugar and 2 tab water. Cool I min, then add 4 tab water and stir until dissolved. Beat yolks and slowly pour in hot caramel. Beat until thick and cold. Fold in whipped cream.
