Mini quiches that sink

I have been making lots of mini quiches lately - no flour variety. They always look magnificent in the oven and when I take them out they flatten away to half their size. What's the key to this?

Add some grated raw potatoe instead of flour.

A quiche filling is basically a custard and isn't expected to be puffy like a cake. A proper quiche is made with cream and egg yolks and the filling is rich and creamy rather than bulky and starchy.

The no flour ones will sink as there is no substance to hold it's shape when baked. Eggs puff up in the oven but when it is sinking out of the oven it has no flour in it to hold. You can add gluten free self raising flour if you are making it for gluten intolerant people.
