So many different ways, impossible to say.
Me, I like straight pork or beef, with minimal additives and no fillers if possible.
Natural casings too.
Prefer single ground over double.
Have gone off herbs and spices, can put them in the pot while cooking.
Can't take them out of the sausage once in.
Meat/Fat ratio, 80:20, fat is flavour, grill on a rack if you want less fat.
Mostly oven bake now.
Tests have shown frying in oil/fat leaves a softer skin on sausage, I hardly notice.

Sage and apple pork sausage
Ingredients, for the forcemeat
1/2kg lean pork meat
1/2kg fatty pork meat
2 granny smith apples, peeled, cored, diced
1 Tbsp freshly chopped sage
Sea salt and freshly ground pepper to taste
