Old/big pak choi

I have some pak choi but it's not the sort I'm used to, it has a large white stem and all the recipes I can find online are for the younger ones, or maybe bok choi?. I know how to cook those ones, what do I do with the big one? Do I slice the stem and just stir fry them up? And the green tops? Is that just like a spinach?

I slice the stems into thin strips, whatever length you care to, and the cut the leaves up and put them in to the stir fry last. Experiment. Prefer pak choy and bok choy to spinach now.

It sounds like Wong Bok: large, very pale green with thick stems and frilly edges. Treat it like any Chinese cabbage i.e. stir-fry or blanch then dress with sesame oil and soy sauce. I make kimchi with Wong Boks, and they can also be braised with Shiitake mushrooms or dried shrimps, Shaoxing wine and soy sauce.

Slice up the white ends into pieces along with the green head.gently heat oil in pan and add onions and garlic then add white slices finally greens then add hoisin sauce and serve..Yummo

Our local Fruit World, owned and operated by Chinese people, sell something that I think you have. It is a choy of some description but I cannot remember the exact name.

It seems that the Chinese cook all of their leafy greens the same way - in a wok with oil, ginger, chicken stock, soy and cornflour or by dipping into a pot of boiling water/stock and serving with soy. The stalk is more important than the leaf, which differs somewhat from our own approach to leafy greens.

Anyway that is how the Chinese vegetable sellers tell me how to cook their wares, apart from Chinese silverbeet, which they do just like ours but Chinese silverbeet is sweeter.

I use it like cabbage and shred for coleslaw, and I use it in smoothies, and I stir fry it. At this point in the season, mine it getting a little bitter for Slaw and smoothies though.
