You will need to check the labels very carefully. It sounds as if you don't have much experience of people with coeliac disease. Please be aware that it is not enough just to use gluten-free ingredients, you also have to ensure that there is no cross-contamination from anything else in your kitchen or on your utensils. For people with coeliac disease even the faintest trace of gluten can be damaging. It might be better to serve something less risky e.g. fresh fruit and double cream, or make a lemon posset. They usually are. My husband is coeliac too, and I've made GF baked cheesecakes for him in the past. The cream cheese and sour cream in our fridge right now is Meadow Fresh brand, so I know that's GF. Just check the labels.
