Which brand of dried apricots do you prefer and where do you buy almond butter? I want to make the apricot, oat and chocolate slice from the recipe on Stuff's food page.

You can make your own almond butter - just roast blanched almonds until they are a little shiny then blend until they turn to paste - you may need to add a little oil but this is how I make peanut butter and almond is the same process. I buy whichever dried apricots feel softest in the packet.

As in the recipe in the link, I don't bother to use blanched almonds either, a little darker in colour but no change to the taste of the end product. Raw almonds are cheaper than blanched too.

Yes raw are cheaper but you can easily blanch them yourself if you didn't want to use the skins

Countdown does a good dried apricot, packed in clear bags, near the bulk foods in most of their stores. I prefer them to the ones in the bins - have seen too many snotty-nosed kids with their hands in there......

Yes, I have done that on occasion in the past but we really don't mind using them unblanched. Plus eating the skins is beneficial for heart health.
