Storing opened jars of olives.

Where do you keep them? How long do you keep them?

I keep them in the fridge. I don't know how long they will last as we get through olives pretty steadily.

I'm the only one that eats them here (apart from the occasional dollying up of a pizza, where they're "tolerated"). I just keep them in the fridge, well covered with liquid, and a thin layer of olive oil on top of that, and lid on. Ready to nibble whenever, and never had any succumb to softness or "nasties".

I asked because I opened a jar and didn't put them in the fridge like I usually do. A friend brined his own olives last year and just leaves the finished olives on his kitchen bench - hasn't killed him. Jar instructions do say to refrigerate after opening and use within 14 days. I do wonder if food manufacturers are too cautious sometimes - better to be safer than sorry and avoid any lawsuits. :)

I think the manufacturers's caution is necessary because they have no control over possible contamination caused by using fingers or a dirty spoon to get the olives out if the jar. The brine will preserve the olives pretty well, but not against all kinds of bacteria.
