Mini Savoury Muffins

Does anyone have a nice tried and true mini muffin I can put some brie and relish in. I need a savoury item to serve in addition to sandwiches.

NGREDIENTS
1½ cups self raising flour
2 cups cheese
½ tsp salt
1 Tbsp sugar
1 cup milk
1 egg
150g Chutney
Cut pieces of Brie
Mix together the flour, cheese, salt and sugar.
Fold the Chutney carefully through the mixture.
Beat together the milk and egg, and gently fold into the dry ingredients.
Place mixture into greased muffin pans.Place a piece of brie into the middle of each muffins
Bake at 200⁰C for 10 – 12 mins.
Cool for 2 -3 mins before removing from pans.

Thanks Petal that looks great.I was thinking of toppings but I see this incorporates it all. I will give them a try. Do you just use tomato chutney sort of thing or would caramelised onion work?

Ham and Cheese Mini Muffins
1&1/2 C Self raising Flour, 1 tsp Baking powder, 2 eggs, 3/4 C milk approx, 2 Tablespoons oil, 1/4 C finely diced ham, 1 C grated cheese, optional diced capsicum or onion.
Whisk eggs, oil and 3/4 C milk and add to premixed dry ingredients and ham and vegetables. Stir to just combine, add extra milk if dry. Spoon into greased mini muffin pans and bake 200 C for 10-12 minutes. Serve as is or slice a diagonal slit into them and fill with a little cream cheese and a dot of relish topped with sliver of salami or pastrami.
