Red Cabbage recipes

Anyone got any favourite recipes for red cabbage that they would like to share please as I have been given a couple of medium sized ones.

Coleslaw with walnuts and a nice vinaigrette or cream dressing.
A dash of vinegar and sprinkle with salt, leave til next day, drain and toss with salad greens it is yum.
Stir fry
Lightly steamed with pepper and salt, always a dash of vinegar or lemon juice. I prefer red to green.

SPICED RED CABBAGE
½-1 firm red cabbage
1 onion
1 medium cooking apple
2 tbsp sugar
3 tbsp butter
½ tsp salt
¼ tsp each of cinnamon and ground nutmeg
â…› tsp ground cloves
1 tsp vinegar
shake of white pepper
1 bay leaf
½ cup water
2 tsp cornflour

Cut the cabbage into long fine shreds. Chop the onion and apple. Put into the pan with all the remaining ingredients, except the cornflour.
Cook for about ½ hour, stirring occasionally, drain a little if necessary, then thicken with cornflour and simmer for 5 minutes.
Serve with e.g. lightly fried sliced onions, thick apple sauce, potatoes and any cooked meat.
Serves 6. :-))

I just shred mine, fry in a little butter and cook until soft enough for your liking. Pour in a glug of pouring cream, cook until cream has reduced and eat !

Thanks everyone for sharing. All coleslawed out. Made it with shredded beetroot, red cabbage, carrot, apple and red onion, added some chopped walnuts and cranberries. Dressing was balsamic vinegar and pomegranite molassis instead of mayo dressing. It was a nice change to the usual coleslaw mix.
