OP, if the steam oven is also a full size and the extra 10% isn't an issue then I'd go for that option. Otherwise I'd stick with an upgrade of what you currently have (I think that is 2 full size ovens) and use the old method of squirting water onto the sides of the hot oven once the dough has been put in for cooking or a small metal container with water in at the bottom of the oven. I only say this because you say you use your ovens a lot and can easily use both at the same time. I have a small oven at the bottom of my regular size oven and quite frankly all it gets used for is storing oven trays and racks. I've used it once to reheat some frozen, homemade hot-cross buns recently but I can do that just as easily in my Weber bbq or Easy Cook.
