Homemade salad dressing - your favourite please

I keep going back to the condensed milk one as I haven't found one I like

Heres a oldie but a goodie.
Salad Dressing.
In a saucepan put 1,1/2 cups cold water, 3 eggs, desertspoon mustard powder, 1/2 cup malt vinegar, 1/2 cup sugar. Tablespoon flour. Whisk all together till smooth. Over a low heat add 2 tablespoons butter, still whisking cook till mixture is thick and creamy, butter is melted. DO NOT LET BOIL or you will have lumps off egg in it. Take off heat cool a little and pour into a jar. Keeps in the fridge. To use spoon some into a container, can thin down with a dash of cream or milk if you want. Nice as a mayo, or tossed through a warm potato salad.

Mine is similar...it has a little oil in it to give it a bit of 'stickability'.

a bit o' olive oil and lemon juice or, mint sauce (Edmonds cookbook) on a lettuce salad is lovely.

This is one that I have developed; it suits most veges including grilled eggplant, and is also delicious as a dressing for fish.

Japanese-style Sesame Dressing

3 tab toasted white or mixed sesame seeds
3 tab rice vinegar
2 tab Japanese soy sauce
2 teaspoons sugar or maple syrup
1 teaspoon sesame oil
1 tab extra virgin olive oil

Grind sesame seeds in a mortar, add rest of ingredients and combine. Check balance and adjust if necessary.

Keeps well in the fridge.

a tin of condensed milk. Add 1/2 teaspoon mustard powder, salt and pepper, tablespoon vinegar. Mix together then thin with milk. Taste and adjust as needed May need more vinegar.A tried and true and easy recipe which is always popular. I make two tins at a time.

Mayonnaise
1 egg
pinch of salt
½ tsp sugar
1 tsp dried mustard
2 Tbsp vinegar
1 cup oil (until desired consistency)
¼ cup finely chopped parsley
1-2 Tbsp thyme
1-2 Tbsp oregano

Mix all of the ingredients together in a blender until well mixed and store in refrigerator for up to 2-3 weeks. It will thicken more on standing.

I have sometimes added in a clove or two of garlic as well.

French Dressing
Mix equal amounts of vinegar and oil in a small jar.

Add: ½ tsp sugar
½ tsp dried mustard
1 Tbsp finely chopped mint
2 cloves garlic finely chopped
freshly ground black pepper
pinch of salt

Shake jar thoroughly and chill until needed.

I used to love the condensed milk one, grew up on the stuff! But don’t think I could stomach it now. I mainly use ev olive oil and apple cider vinegar.

An Asian dressing needs some freshly grated ginger as well..

Home made mayonnaise. But shop will do in a pinch.

But today I am making a carrot and lettuce salad with a sweet sour dressing, no sugar, just pineapple juice...and it has sesame seeds and spring onions too. Cause bored with the usual salads at the mo....

I agree with you on the bored with the usual - I much prefer vinaigrette type dressings over creamy/mayo type although I love good home made aioli as a dip
