bran muffins anyone got a good recipe without too

much sugar, I have got a good recipe but its got too much sugar in it

I use this recipe but vary it to suit what I have on hand.

Spiced sultana bran muffins.

1 cup flour
1 tsp baking powder
1/2 tsp salt
2 tsp mixed spice
1 1/2 cups wheat bran
1/4 cup sugar
1 tsp baking soda
1 cup milk (approx)
1 Tbsp melted butter
1 Tbsp golden syrup, melted
1 egg, beaten
1/2-1 cup sultanas
Pre heat oven to 220c
Combine all dry ingredients (except BSoda) in a bowl
Dissolve Baking soda in milk, add egg, golden syrup and butter
Pour liquid into dry and stir quickly until just combined
Spoon into muffin tins and bake 12-15 mins, Makes 12
I vary this recipe as follows:
-Replace sultanas with mashed banana or grated apple
-Use different spices eg cinnamon
-Replace egg with a scoop of yoghurt
-Leave out sugar if using banana or apple

I have not tried this recipe, so no idea if good or not.

1/4 c sugar
2 c bran
1c Sultana's
1 c milk
1 tsp baking soda
2 Tbsp butter
1 c flour
1 egg
1/2 c golden syrup
Mix dry ingredients. Add egg and melted butter, syrup and milk.
Beat together, then add baking soda in a little boiling water.
Bake in moderate oven (150c) for 10-5 minutes.

Eggless Apple bran muffins
2c flour
1/2 tsp salt
2c milk
1 tsp baking powder
1/2 tsp nutmeg
1/2 c raisins
1/2 c golden syrup
1/2 c sunflower seeds ( opt)
1-1/2c bran
1 c chopped Apple
2 Tbsp oil
1-1/2 tsp baking soda
1Tbsp orange rind
Juice of orange
Mix together flour, bran, soda and nutmeg. Stir in orange rind, Apple, raisins and seeds. Pour juice into a 2c measure and add milk to make it 2c. Add golden syrup and oil to milk. Stir dry ingredients into liquid.
Bake 180c 20-25 minutes.

Also not tried. Both recipes come from 1995 Kamo Primary recipe book.

A recipe I got from the hospital once was:
Sift together
1/2 cup wholemeal flour. I use ordinary.
1 tsp baking powder
1 tsp baking soda
2 cups baking bran

In a saucepan warm 1/4 cup golden syrup
Whisk in
1 cup of milk
1 egg
Add dry ingredients. I add sultanas too.

Bake in greased patty tins for 10-12 mins at 200c. Leave in tins for five mins before turning out.

Just reduce the amount of sugar in your recipe. I do this to all my recipes now and have never had a problem.

Yes that's what I was thinking but will try the recipes above, I can heat the golden syrup in the microwave

I may be reading this incorrectly, but I hope you are not thinking that golden syrup is not sugar. It is made from sugar.

Mine is pretty much the same as "johnnythecat" except I put apple, banana, sultanas & walnuts into all of mine and double the recipe. They don't hang around long as my family love them.
