The following is the recipe I use. It doesn't have a major apricot flavour but we enjoy it and always ensure that the measuring cup of apricots is very firmly packed so it's a very generous ½ cupful measure. Note that there is no icing, just a very very light sprinkling of caster sugar. APRICOT FUDGE CAKE Heat the butter, brown sugar and sweetened condensed milk just until the butter melts. Remove from the heat and add the biscuits and the apricots. Mix well, then press the mixture into a greased and base-lined 19cm square tin. 26 | I do this Magic Slice that 245sam posted some time ago but do variations. 245sam mentioned using dried apricots so I tried that and do apricots and white Choc drops. Have also put in cashews or macadamias. Often change it up to suit the fruit, nuts or Choc that I have in the cupboard. Have also added mini marshmallows. MAGIC SLICE Mix the biscuit crumbs and butter then press the mixture into a 28cm x 18cm tin. Topping: Evenly sprinkle the ingredients over the biscuit base in the order given, then evenly pour the sweetened condensed milk over the top.
