Ideas for using beetroot

I have only recently discovered beetroot (was always put off by the canned stuff my mum bought!).
I have been roasting it, and made a nice feta and beetroot dip, but would like some more ideas if anyone has any good recipes.

Personal question but does it change your pee ? Friend ate a large can fill of baby beets ( yum ) and thought she was dying !

Yeah, makes it go a little bit purply-pink.
This happens to me if eating roast beetroots, but not beetroot juice.

Also discolours your poos.

We had too much after growing it and I have tried freezing it by cutting into small pieces and freezing - will probably be only good for roasting but worth a try.

These are my favourite ways of using beetroot.
Roasted Beetroot & Carrot Salad
Carrots and beetroot cut into batons, red onions quartered. Put into large bowl. Add olive oil, orange juice, balsamic vinegar, sprinkle with brown sugar. Roast until tender. Delicious hot or cold.
Sometimes I don't bother doing this in my oven, I use my electric frypan - comes out great every time and it is a big favourite all year round in this house.
Raw Carrot & Beetroot Salad
Grate 2 carrots, 1 beetroot and the rind of one orange into a bowl.
Add the juice of the orange, 1 crushed clove of garlic, 1 Tbsp Olive Oil,
2 tsp Honey, 2 Tbsp Sesame Seeds, 1 Tbsp chopped Mint OR Parsley, (which ever you prefer - I love the mint option) Salt & ground Pepper.
Both these dishes are very tasty and the raw salad is even better the next day.

Make a beetroot cake, seriously use the carrot cake recipe and substitute the carrot for the beetroot, make a really yummy cake

My Mum used to make Jellied Beetroot. Wash the beetroot, don't peel. Place in a saucepan of cold water and bring to the boil. Simmer for about 45mins. Don't break the skin or they will 'bleed' - lose their juice. Leave in the water until cool enough to handle. Take them in your hands and rub gently, and the skins will slide off. You can wear rubber gloves if you don't want the juice stain on your hands. Reserve the water. Now, trim the top and base off. Cut into slices. Place in a heatproof dish. Heat 1c of the strained beetroot water, pour over a red jelly...raspberry or the like, add 1/2c malt vinegar. Stir until the jelly has dissolved. Pour over sliced beetroot. Leave to cool....Delicious.

Served hot as a vegetable with a topping of sour cream, sprinkle of parsley.

I'm sure I had it somewhere with coconut cream!

At a long gone favourite Takapuna buffet (Oceans?) they served it in a jelly that might even have been fruit flavoured (tart raspberry?). Very tasty.

one of my quick snack salads

1) grated or thinly sliced beetroot, grated cheese, tomato, grated carrot
sliced lettuce , salt and pepper,,, mix all together and add lots of thick mayonnaise...

2) beetroot sliced , sliced red onions, sliced cucumber. chopped spring onions, honey, salt, cider vinegar , chopped boiled eggs, chopped fresh dill, black pepper, garlic.. all bound with yogurt or sour cream.

Borscht is lovely there and many recipes both chunky and sieved. Beetroot relish and chutney are nice too. I have even found a recipe for Rogan Josh using left over beetroot cooking juice (from relish) to make the curry red and flavourful.

Annabel Langbein has a recipe for a mud cake - i made it last weekend, and turned it into muffins, took them too work for morning tea- have made 4 more batches and 2 more cakes it was that good!!!

Beetroot chutney. Goes well with cheese, pork, sandwiches. This is my recipe improved from Jo Seagars. I bottle them up and use it over the year. Flavour improves as it sits. I make double the recipe if I am bottling. Lol last lot I made I quadrupled the recipe so have plenty at the moment. That was a bit too much but I always have people begging for it so good to have some spares.

Beetroot Chutney
375g fresh grated beetroot
230g finely chopped onions
1/8 tsp ground pepper
1 ½ tsp ground all spice
½ tsp ground cloves
¼ cup currants
1 tsp salt
1 ¼ cup soft brown sugar
180ml apple cider vinegar or any vinegar (prefer apple cider)
Juice and rind of 1 orange
1 or 2 large granny smith apple peeled and grated

Add all of the above in a pot and bring to a boil
Turn heat down to low and simmer for half an hour stirring every now and then

Add 1 TBS of corn flour mixed in a little vinegar to the beetroot mixture.
Stir well and cook for further 10 minutes.
Bottle in sterilized jars.

Here's a recipe for a beetroot salad that I often make:

Beetroot Salad (raw)

Serves 6

Vinaigrette
3 cloves garlic finely chopped
1 tab Dijon mustard
1 tab red wine vinegar
salt
3 tab. e.v. olive oil

500g fresh young beetroots (3 med.)
1 tab fresh herbs – parsley, tarragon, chervil, chives.
3 tab capers
4 gherkins, chopped

Peel beetroots and grate finely. Mix with dressing and other ingredients. Stand to mellow 30 min or more.

I grate beetroot (peeled, raw) on a very fine grater, then add peeled apple (grated on a very coarse grater - as the apple is so much softer than raw beetroot and you do not want to turn it into mush when mixing with the dressing).

My dressing is a few spoonfuls of greek yoghurt, a few spoonfuls of mayo and lots of garlic, onion, salt and pepper and some sharp vinegar (apple cider works well). The amounts depend on how much veges you have grated. Try it out.

Mix all together and serve or fridge for a few hours. Mix before serving.

They are excellent, balanced salads using beetroot. Have had them each at least once in the past couple of weeks.

This is very nice, and one of my favourites.
Unsure where I originally got it from though.

Raw Beetroot, Walnut and Mint Salad with Cumin Labne

Raw beetroot has an earthy sweetness that I adore. It's incredibly nutritious; a powerful detoxifier and an agent for helping your body absorb iron. Labne is a fresh yoghurt cheese made by straining Greek Yoghurt overnight. Try to use yoghurt with live cultures to make the labne extra nutritious.
The addition of tahini and cumin give this dish a delicious slightly Middle Eastern note. The salad will work beautifully as a stand-alone meal or as a tasty shared plate for picnics or BBQs. It will last for a couple of days too so consider lunch sorted!

500 grams Greek yoghurt
1 1/2 teaspoon ground cumin
2 medium/large beetroot, peeled, trimmed and grated.
2 large carrots, peeled and grated
1 heaped tablespoon tahini
juice of 1 lemon
1 tablespoon extra virgin olive oil
1/2 cup good quality walnuts - roughly chopped
1 large handful mint - roughly sliced
sea salt and cracked black pepper
To serve: extra walnuts, sliced fresh mint and cracked pepper
Serves 4 as a main or 6 as a side dish

12 hours prior to making the salad place yoghurt in a sieve lined with muslin or cheesecloth over a deep bowl and leave in the fridge to drain for 8-12 hours until very thick and stiff. Discard the liquid.
Add ground cumin and season generously with sea salt and cracked pepper. Place grated beetroot and carrot in a large bowl. Add the tahini, lemon juice and olive oil. Stir well until evenly coated. Add mint, walnuts and sea salt.
Serve with a dollop of labne and garnish with extra walnuts and mint.

And another way of using beetroot.

In a green Smoothie, that is 400 to 500 mil cold water, about 60% full of Kale or Spinach or a combination, 2 apples cored and cut into quarters, 3 kiwifruits at least, spoonful each of Bee Pollen, spirulina and chorella, 2 spoonsfuls of Super Green Powder, and about a spoonful plus of stevia plus a grated Beetroot of good size.
Simply blend all, Oh I use a 1.6 litre Kenwood Blender but any blender will do it but may need to alter quantities to suit. Just ensure the water level is sufficient to work nicely.

I have this with my Dinner and breakfast alternating with other various fruit / berry smoothies.

But adding the beetroot simply adds that extra dimension of super food.

You hate bottled beetroot?....well I recommend for you to try this, a family recipe handed down, there is no exact quantity of beetroot to liquid, but a bit of guess work is involved.

Boil for 20 minutes:-
1cup vinegar
1 cup sugar
2 cups water
1 teasp salt
Add cooked sliced beetroot to liquid, bring back to boil, and overflow into hot jars. I cut mine into chunks if the beetroot is large, as it fits better into smaller mouthed jars.
Double the quantities , or 1+1/2 it if you think there won't be enough liquid

Tonight's dinner included a large tray of baked vegetables: small beetroot, yams, onions, potatoes, carrots, all chopped to roughly equal size and baked for about an hour, stirring about every 20 minutes. About 20 minutes before removing from the oven I added a liberal splashing of balsamic vinegar. Very tasty.

Goult, I love beetroot (unfortunately my hubby and kids don't though). Yes, it probably does make your "pee" a bit coloured, however Asparagus with I love also, does the same. Beetroot is very good for you - full of iron / nutrients, however it is an acquired taste. There may be others in here that remember the good old cucumber and beetroot salad (with vinegar) - my Nana used to make it - very popular back in the 60's / 70's. (it was a bit "icky" with the vinegar, however I ate it). Now, there are many other ways / variations - carrot and beetroot salad, baking / roasting with a variation of garlic / spices in tinfoil etc.

My go to salad for beetroot -
Chop beets into cubes and boil until tender or however you like it. Drain and tip into your serving bowl. Glug over acouple of tablespoons of sesame oil and set aside to cool. Cube some feta and roughly chop some unsalted roasted almonds or hazelnuts and add to the beetroot. Carefully combine trying not to smash the feta too much.
Really good made earlier in the day. I usually serve this when we BBQ.
